Pancakes on a Stick

1. Select whichever pancake recipe looks best to you.
2. Reduce the liquid by a couple of tablespoons to create a thick batter.  Pourable, but not stiff like a bread dough
3. Put Farmer John sausages on lollipop or popsicle sticks
4. Pat them dry
5. Bring 1-2 C canola or peanut oil up to about 360º in a heavy skillet
6. Put the batter into a tall skinny glass.
7. Dip the sausages into the batter
8. Let drip a bit, then place into the hot oil until golden brown (about 2 minutes) rotate to brown both sides
9. Let drain on a wire rack over a paper towel or newspaper

Great with a honey-mustard dipping sauce.
