Acorn Squash

Method 1: Air Fryer Acorn Squash Halves
  • Prep the squash: Cut a 1.5-pound acorn squash in half from stem to bottom. Scoop out the seeds and pulp with a spoon (save the seeds to roast later if you like).

  • Season: Brush 2 teaspoons of olive oil over the inside and outside of the halves, then sprinkle the cut sides with 1/4 teaspoon of salt.

  • First cook: Place the halves cut-side down in the air fryer basket. Air fry at 400°F for 10 minutes.

  • Second cook: Flip the squash cut-side up. (Optional: add a pat of butter, a drizzle of maple syrup, or a pinch of pumpkin pie spice to the center).

  • Finish: Continue air frying at 400°F for 8 to 10 more minutes until the flesh is fork-tender and browned. [1, 2]

Method 2: Air Fryer Acorn Squash Slices

  • Prep the squash: Cut a medium acorn squash in half, remove the seeds, and slice the halves into 1/2-inch to 1-inch thick half-moon pieces.

  • Season: Toss the slices in a large bowl with 2 tablespoons of olive oil, 1 teaspoon of kosher salt, and 1/2 teaspoon of black pepper.

  • Cook: Arrange the slices in a single or light double layer in the air fryer basket. Air fry at 375°F to 400°F for 15 to 18 minutes, shaking or flipping the slices halfway through.

  • Glaze: Toss with a warm mixture of melted butter, a touch of honey or maple syrup, and minced garlic right before serving.
