Pickled Onions

INGREDIENTS

  • 1/2 C water
  • 1/2 C ice water (last step)
  • 1 tablespoon sugar
  • 1-1/2 teaspoons Kosher salt
  • 1/2 cup apple cider or red wine vinegar
  • juice from one lime
  • 1/2 tsp mustard seeds
  • 1/2 tsp corriander seeds
  • 1 tsp black peppercorns
  • 1 medium red onion, thinly sliced

STEP BY STEP

  1. Heat water in microwave for 90 seconds
  2. Whisk in sugar and salt creating a brine
  3. Add vinegar to the brine
  4. Slice onion into thin slivers
  5. Add onions to brine
  6. Let marinate for 1/2 hour
  7. Add ice water to the brine
  8. Place mixture in a jar and refrigerate for at least 1 day
  9. Pickled onions will last for two weeks stored in the refrigerator
