Chilled Strawberry Gazpacho

  • 2 C strawberries
  • 1 C cucumber (diced, seeds removed)
  • 1 C heriloom tomato
  • Optional Scant:  mint, fennel, garlic, jalapeño, oregano, basil
  1. Blend well
  2. Strain
  3. Chill 2-8 hours
  4. Pour into glass
  5. Drizzle with balsamic reduction and focaccia noodle or string
  6. Garnish with micro greens or cheese crumbles
