Quick Stir-Fry

This recipe is from Food Networks “The Kitchen” but you can add any veggies you want

  • 1 Chicken Breast – cooked and chopped thin
  • Put into skillet with a bit of Sesame oil and brown
  • Set aside chicken
  • Chopped mushrooms into skillet with 1 TBL butter
  • Add chopped or shredded carrots
  • Cook until mushrooms start to brown
  • Add 1 clove garlic (or garlic paste)
  • Canned chopped pineapple with juice
  • Add 1/2 C Sweet Chili Sauce
  • Put chicken back into the skillet
  • Add 1/2 C lime juice
  • Plate on top of cooked rice
  • Top with toasted sesame seeds
