This recipe is from Food Networks “The Kitchen” but you can add any veggies you want
- 1 Chicken Breast – cooked and chopped thin
- Put into skillet with a bit of Sesame oil and brown
- Set aside chicken
- Chopped mushrooms into skillet with 1 TBL butter
- Add chopped or shredded carrots
- Cook until mushrooms start to brown
- Add 1 clove garlic (or garlic paste)
- Canned chopped pineapple with juice
- Add 1/2 C Sweet Chili Sauce
- Put chicken back into the skillet
- Add 1/2 C lime juice
- Plate on top of cooked rice
- Top with toasted sesame seeds
