Togarashi

Shichimi Togarashi, Japanese Seven Spice

This blend is used throughout Japan as a table condiment, occupying much the same place that salt and pepper do in the American household. Togarashi has a special affinity for Japanese noodles and soups, but can also perk up fish, poultry and beef.  Contains Korean chile, paprika, orange peel, seaweed, ginger, poppy seeds, and sesame seeds.

This varies just a bit from the traditional recipe, but I’ve tweaked it to the flavors that I prefer.

Ingredients
  • 2 teaspoons white sesame seeds (toasted)
  • 1 teaspoon black sesame seed (toasted)
  • 1 teaspoon poppy seed (toasted)
  • 3 teaspoons Szechuan peppercorns (coarsely ground)
  • 1 teaspoon dried nori (seaweed) 3 – 2 ” square (pulverized)
  • 1 teaspoon sweet paprika
  • 3 teaspoons dried tangerine peel (pulverized)
  • 3 teaspoons chili powder – cayenne
  • 1/2 teaspoon dried minced garlic

  • 1/4 C extra virgin olive oil
  • 1/2 tsp salt

  • Peel your bell pepper (DO NOT RINSE) and chop into pieces.

Great as a side to chicken or pork

Juevos Martajada (eggs with salsa)

We will start with Salsa Martajada, and then extend this into a great egg recipe.

  1. Cook 6 Roma tomatoes and 1/2 onion pieces and garlic cloves coated in oil under the broiler.  About 10 minutes or until blackened
  2. Either put 2 banana peppers and 2 poblano peppers under the broiler as well, or peel them using a flame (which I prefer) Instructions here.
  3. Once all above ingredients have been processed, pulse them in a food processor only until in chunky but small pieces, NOT pureed.
  4. Add 1 tsp salt, 1/2 tsp chile powder or cayenne
  5. This is good just like this for chips, etc.

Juevos Martajada

  1. Lightly (soft) scramble two eggs
  2. Add 1-2 TBL salsa martajada

Avocado Hollandaise – VEGAN

This is really simple, and is great on grilled vegetables (eg) Eggplant, asparagus, bell pepper, green onion, carrots, onion, garlic, mushrooms, zucchini, tomato, squash, etc.  This is also a VEGAN / VEGETARIAN recipe.

Put into blender:
1 ripe avocado
1 tsp lemon juice
Salt and pepper to taste
Cayenne pepper to taste

Emulsify 2 TBL EVOO
(drizzle in slowly while blender is running)

Microwave Hollandaise

  • 2 egg yolks
  • 1 tsp lemon juice
  • 1/4 tsp or a pinch salt
  • 1/4 tsp or a pinch cayenne pepper
  • 1/4 tsp or a pinch corn starch
  • 1 TBL whole milk
  • 1/4 cup salted butter, melted in separate bowl – clarified
  • Grated cheddar cheese
  • English muffin
  • Eggs (poached or lightly fried)
  1. Whisk everything except the butter together in a microwave-safe bowl until smooth.
  2. Slowly stream melted butter into the egg yolk mixture while whisking to incorporate.
    – This will suspend the butter particles and make a smoother sauce.
  3. See footnote at this point
  4. Heat in microwave for 10 seconds at a time; whisk, repeat about 5 or 6 times until it starts to thicken.
  5. DO NOT OVERCOOK or you will curdle/cook the eggs.  STOP AS SOON AS YOU SEE ANY LEVEL OF CONGEALING.  Finish by whisking well, then strain out any clumps

FOOTNOTES:

  • Break the woody stem from your asparagus. Cut the tops off as shown in the photo. Cut the remaining middle into small pieces and sprinkle onto the English muffin, and sprinkle with a bit of cheddar cheese to hold the pieces in place. Microwave the whole thing about 15 seconds.
  • If you are preparing Eggs Benedict (see photo) make sure to have your muffins toasted, your ham prepared, your asparagus heated, your poached eggs done, and so forth. As soon as you start Step 4 your are less than a minute away from serving.
  • If sauce separates after microwaving, add a splash of water and whisk until combined.
  • I prefer to sprinkle my cayenne over the top rather than mixing it into the eggs cause Grandma just can’t take the heat. (See bottom picture!)

Blender Hollandaise

Here is an alternate recipe that does not require cooking. You are forewarned about the whole raw egg stuff.

INGREDIENTS and STEP BY STEP

  • 4 egg yolks (Save the whites for tomorrow)
  • Salt to taste
  • 1 tsp Dijon mustard
  • Zest and Juice of 1 lemon
BLEND ABOVE until the mixture starts to lighten
  • Lower blender speed to lowest setting
  • Drizzle in 6 TBL sizzling hot melted butter
  • OPTIONAL: Add in diced chives (to taste)
  • Add a pinch of cayenne pepper
  • Pour over English Muffin topped with spinach or ham, then top with a poached egg.  Alternately, you can use VERY thinly sliced beef.

Julia Child’s Easy Blender Hollandaise Sauce

Servings:  4 servings
Prep Time:  2 minutes
Cook Time:  3 minutes

Description

Simple hollandaise sauce made with egg yolks, lemon juice, butter, salt and pepper. Inspired by Julia’s recipe in Mastering the Art of French Cooking.

Ingredients

  • 3 large egg yolks
  • 1/4 tsp salt
  • Pinch pepper (I use a small pinch of cayenne)
  • 1–2 tbsp fresh lemon juice (I use closer to 2 tbsp)
  • 1/2 cup hot unsalted butter

Step by Step

  1. This sauce should be prepared immediately before serving– it will only take you about 3 minutes to make.
    •  Place eggs yolks, salt, pepper, and 1 tbsp lemon juice in the blender jar. You can beat in more lemon juice to taste when your sauce is done, and then you will know which proportion you prefer for next time.

  2. Cut the butter into pieces and place it in a small saucepan.
    •  Heat it till it’s melted, hot and foamy.

  3. Cover the jar of the blender and blend the egg yolk mixture at top speed for 2 seconds.
    •  Uncover, still blending at top speed, and immediately start pouring the hot melted butter in a thin stream of droplets. (You may need to protect yourself with a towel during this operation.)

  4. By the time two thirds of the butter has gone in, the sauce will be a thick cream.
    •  Omit the milky residue at the bottom of the pan. Taste the sauce, and blend in more seasonings and lemon juice to taste.

  5. If not used immediately, set the blender jar in tepid (lukewarm), but not warm, water.
    •  Use the sauce within a few minutes of blending; it will solidify if not used quickly.

  6. Use hollandaise to top any number of delicious dishes.

  7. RAW EGG NOTE: This sauce uses uncooked egg yolks. This is not an unusual practice (most Caesar Salad recipes contain uncooked egg), but it does carry a small amount of risk. I’ve been told that the friction of the blender and the scalding hot butter “cook” the egg during emulsion, but to be on the safe side I need to offer this cautionary note – use caution in consuming raw and lightly cooked eggs due to the slight risk of salmonella or other food-borne illness. To reduce this risk, use only fresh, properly refrigerated, clean grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.

Basic Hollandaise

This is technically a good recipe, but I like my recipe better.  It’s easier and tastes almost as good.  CLICK HERE.

INGREDIENTS

  • 1 Shallot or onion
  • 1 tsp peppercorns
  • 2 TBL EVOO
  • 1 ice cube (or a bit of crushed ice is even better)
  • 4 egg yolks – pasteurized only – Save the whites for something else
  • 2 TBL buttermilk
  • 1 tsp cornstarch
  • 1 stick (8 TBL) cold butter – cut into tabs
  • 1 tsp white vinegar
  • Salt to taste
  • 1 bay leaf
  • Juice of 1 lemon
  • Pinch of cayenne pepper

STEP BY STEP

  1. Simmer shallots and peppercorns in the EVOO for about 5 minutes.
  2. Let the oil cool slightly, then add an ice cube to speed up cooling.
  3. Strain out all of the solids. Discard solids and set oil aside.
  4. Separate eggs – Keep whites for an omelet tomorrow
  5. Beat yolks
  6. Add oil into the yolks. TEMPER them together if your oil is still very warm
  7. Add bay leaf
  8. Mix egg yolks and corn starch into buttermilk
  9. Whisk it all together until it starts to get foamy and lighten in color
  10. Place all of the above in a double boiler
  11. Put in cold tabs of butter into egg mixture, whisking as you go to emulsify the butter.   DO NOT rush this step.  Add another tab of butter when the first one melts.
  12. Bring up to heat slowly. If the mixture becomes too hot the eggs will clump and cook.   If this happens, just strain the clumps out before serving. There is, however, no going back.  NEVER EVER BRING THE TEMPERATURE HOTTER THAN 135º
  13. Add salt to taste, lemon juice, and a pinch of cayenne
  14. It is ready when it starts to thicken
  15. You can remove your double boiler from the heat and add in two ice cubes for 15 seconds, then remove them.  This stops the cooking.
  16. Put the double boiler back on and cover it. This will keep it warm until you are ready to use it.

Halloween Pumpkin Butter

This is best with sugar pumpkin (aka pie pumpkins) as the sugar content is higher than Jack-o-Lantern pumpkins.  Takes about 30 minutes total.

Ingredients

  • 15-ounce cans pumpkin puree (not pumpkin pie filling)
  • 2 TBL honey
  • 2 TBL maple syrup (Grade A is best)
  • 1/4 cup brown sugar
  • pinch sea salt
  • 1/4 C apple sauce
  • 1 TBL lemon juice
  • 1/2 tsp ground ginger
  • 2 tsp CinnaSugar®
  • 1/8 tsp ground clove

Instructions

  1. Add all ingredients to a large saucepan or pot over medium-high heat and stir to combine.
  2. Once it begins bubbling, reduce heat to medium and simmer.  You want an active boil, but not frenetic.  Reduce or increase temperature as necessary.
  3. Cook, uncovered, for 15-20 minutes, stirring occasionally.
  4. Taste and adjust seasonings as needed.  Add more sugar, salt or lemon if necessary.
  5. Transfer hot to clean canning jars.  If using within the next month, a normal jar is OK.

Individual Serving of Gravy

Gravy packets are usually stuffed into the body cavity of your frozen turkey.

Ever wonder what to do with that gravy packet that comes with your frozen turkey when nobody at your dinner really eats gravy – but you do.

Here is an answer:

  1. Mix the gravy packet with 2 C of pan drippings
  2. Add whatever gravy seasonings you like.  I added 1 TBL Thunder Powder.
Grandpa's Thunder Powder or Arghhh Powder
  3. Ladle into cupcake silicon liners.  Don’t use paper, it will essentially dissolve.  You can use it, but be careful when thawing.
  4. Freeze overnight
  5. Put into a bag with a link to these instructions.

www . grandpacooks . com / recipes / gravy

When you are ready to make your gravy, do this:

  1. Put one or two gravy cupcakes into a pan.
  2. Let melt for about an hour on the counter.  No longer.
  3. If you are ready to cook now, microwave 15 seconds at a time breaking apart with a spoon until thawed.  It doesn’t need to be completely thawed, just mostly.
  4. Start to heat the gravy on the stovetop.
  5. Mix 1 tsp cornstarch with 1 TBL water PER CUPCAKE.
That is, if you are making two, use 2 tsp and 2 TBL.
  6. As soon as you see the first sign of steam, TEMPER the hot liquid into your cornstarch, 1 TBL at a time.
  7. After 4 TBL into your cornstarch, slowly drizzle the cornstarch into your gravy whisking continually.
  8. Stir until it thickens.  That’s it !

ALTERNATE PREPARATION

  1. Starting with your melted gravy, heat in microwave 30 seconds.
  2. Remove and stir in 1 tsp cornstarch with 1 TBL water PER CUPCAKE.
That is, if you are making two, use 2 tsp and 2 TBL.
  3. Heat another 30 seconds
  4. Remove and stir.
  5. Repeat “remove and stir” at 10 second intervals at this point.  If you try to increase time to, let’s say 20 seconds, you will find that your gravy has developed clumps.
  6. When it has thickened enough for you, it is done.
