Bread salad

Toast day-old bread
Red onion sliced thin
Heirloom tomato pieces
Cucumber medallions
Sliced Pepper
A few mint leaves

Select your favorite dressing and blend with a quarter cup of cheese

Cube your bread
Combine all dry ingredients and toss together
Add dressing at the last minute and toss together
