Six Inch Cast Iron Cookies

COOKING NUMBER ONE

This is similar to the birthday cookies you get at Black Angus restaurant

Ingredients

  • 2 TBL butter (melted)
  • 1 TBL butter (cold)
  • ¼ C brown sugar
  • 1 T granulated sugar
  • ½ tsp vanilla
  • scant salt
  • 1 egg
  • ½ C AP flour
  • ¼ C chocolate chip chunks

Step by Step

  1. Pre-measure all ingredients – this goes quickly
  2. Melt 2 TBL butter in cast iron pan over medium heat
  3. Stir until butter starts to brown, but NOT blacken
  4. Pour excess butter into a glass cup
  5. Put 1 TBL cold butter into the glass cup to cool the butter quickly
  6. Remove pan from the heat
  7. Add the butter and an egg to the sugars– Stir 3 minutes, rest, stir 3 minutes, rest and stir 3 minutes
  8. Meanwhile, combine the flour, salt and baking soda
  9. Combine the sugar mixture in with the flour – Mix to incorporate, but don’t over-mix
  10. Add the thin dough to the skillet
  11. Place chocolate chips on top evenly
  12. Put skillet into the oven at 375º and bake for 15-20 minutes
    – Should be browning and perhaps sizzling around the edge
  13. Let cool 15 minutes before serving

COOKIE NUMBER TWO

  • 1 box brownie mix
  • Pecans
  • Top with chocolate chips and vanilla ice cream
    • Prepare according to brownie directions
    • Add the pecans to the mix
    • Bake and then top with caramel
  • Caramel Sauce and Cinna Sugar
  •
