Spiralized Cucumber Salad

THIS RECIPE HAS NOT YET BEEN TESTED

    • Shred two chicken thighs or one breast.
    • Make your Drunken Sauce
      • 2 TBL soy
      • 1/2 tsp corn starch
      • 2 TBL Hoisin
      • 1 TBL fish sauce
      • 1 TBL sweet chili sauce
      • 1-2 tsp sesame oil
    • Spiralize an English Cucumber using a Benriner spiralizer
    • Cut a Vadalia onion thinly and put into medium-hot skillet
    • Meanwhile, chop yellow or red bell pepper
      • Add to skillet
    • Meanwhile, smash and mince a clove of garlic
      • Add to skillet
      • Add chicken to the skillet
    • Meanwhile, halve a dozen cherry tomatoes
      • Add to skillet
    • Meanwhile, cut 3-6 scallions in 3/4 inch pieces
      • Add to the cucumber noodles
    • Toss noodles with the warm (not hot) chicken mixture
    • Top with fresh basil chiffonade
