Pepperonata

Ingredients

  • Misc peppers – all colors
  • Onion
  • Salt and pepper
  • Favorite spices
  • Splash red wine vinegar

Step by Step

  • Clean peppers
  • Put over medium to low heat
  • Add garlic, dried oregano and thyme
  • Olive oil to cover bottom of pan
  • Simmer 45 minutes
  • Fresh herbs at the very end
  • Keep for up to a week in the fridge
  • Serve as a side with any meat
