Baked Tomato Sauce

  • 8 Roma Tomatoes – seeds removed
  • 3 cloves Minced garlic
  • 1/2 Chopped onion
  • 1/2 tsp Corriander
  • 1/2 tsp Oregano
  • 1/2 tsp Thyme
  • Salt & pepper
  • Drizzle with EVOO
  1. Bake in glass baking dish for 2 hours @ 325º
  2. Increase heat to 400º and cook another 30 minutes
  3. Run through a food mill
  4. Add 1 C white wine and heat over medium heat
  5. Simmer 5 minutes
  6. Serve over pasta
