{"id":999,"date":"2012-02-20T18:59:44","date_gmt":"2012-02-20T18:59:44","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=999"},"modified":"2019-12-26T16:12:59","modified_gmt":"2019-12-26T23:12:59","slug":"asparagus-with-yolk-sauce","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/asparagus-with-yolk-sauce\/","title":{"rendered":"Asparagus with Yolk Sauce"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>Fresh asparagus<\/li>\n<li>1 egg for each 6 pieces of asparagus<\/li>\n<li>1 tsp lemon juice per egg<\/li>\n<li>dash of cayenne powder per egg<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Steam asparagus until finished OR<br \/>\n&#8211; Put on baking sheet, drizzle with oil, and bake for 8 minutes at 350 degrees<\/li>\n<li>While asparagus cooks, separate egg yolks<\/li>\n<li>Bring water up to boiling then turn down heat to low<\/li>\n<li>Place large metal bowl over water on pot creating a double boiler<\/li>\n<li>Put lemon juice and cayenne into double boiler<\/li>\n<li>Add yolk to double boiler and whisk until it starts to thicken<\/li>\n<li>Plate asparagus<br \/>\nDrizzle yolk mixture across asparagus<\/li>\n<\/ol>\n<p><strong>SPECIAL STEPS<\/strong><\/p>\n<ul>\n<li>When buying asparagus choose bunches of uniform sized spears.<\/li>\n<li>I prefer pencil-slim ones because they don&#8217;t need peeling, and cook faster and more evenly than thick stalks.<\/li>\n<li>Tips should be tightly closed and the entire stalk should look plump and fresh.<\/li>\n<li>Trim away tough ends by bending one stalk to find the natural break point.
