{"id":943,"date":"2012-02-12T14:42:22","date_gmt":"2012-02-12T14:42:22","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=943"},"modified":"2019-04-14T15:00:13","modified_gmt":"2019-04-14T22:00:13","slug":"kale-and-mustard-greens-pasta-noodles","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/kale-and-mustard-greens-pasta-noodles\/","title":{"rendered":"Kale and Mustard Greens Pasta Noodles"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>Large handful of Kale or <a href=\"https:\/\/en.wikipedia.org\/wiki\/Mizuna\">minzuna<\/a>.<\/li>\n<li>Large handful of mustard greens, collard greens, or spinach<\/li>\n<li>2 C White AP Flour<\/li>\n<li>1\/2 C flax or whole wheat flour<\/li>\n<li>3 yolks plus 1 whole egg<\/li>\n<li>1\/2 tsp salt<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<figure id=\"attachment_944\" aria-describedby=\"caption-attachment-944\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/02\/P1280329.jpg\"><img decoding=\"async\" class=\"size-medium aiif944\" title=\"Noodles can be cut to any width\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/02\/P1280329.jpg\" alt=\"Noodles can be cut to any width\" width=\"300\" height=\"231\" \/><\/a><figcaption id=\"caption-attachment-944\" class=\"wp-caption-text\">Noodles can be cut to any width<\/figcaption><\/figure>\n<ol>\n<li>Steam greens<\/li>\n<li>Chop the steamed greens small<\/li>\n<li>Squeeze all moisture from greens \u2013 Press between paper towels and newspaper<\/li>\n<li>Chop again to make sure they are very fine<\/li>\n<li>Sift together All-Purpose Flour, flax or whole wheat flour and salt<\/li>\n<li>Create a \u201cwell\u201d in the flours<\/li>\n<li>Crack and beat the eggs into the well and start to mix<\/li>\n<li>Add water 1 tsp at a time (if necessary) to allow dough ball to come together<\/li>\n<li>Wrap in plastic and let contents meld for 30 minutes<\/li>\n<li>Using a rolling pin on a floured surface, roll, flip, roll, flip, etc<br \/>\nIdeally, if you have a pasta roller, start on setting 5 and go down to setting 2.<\/li>\n<li>Once desired thickness is obtained use pasta cutter or pizza cutter and a ruler to cut strips<\/li>\n<li>Hang out to dry for 30 minutes before cooking<\/li>\n<li>Cook only until noodles are softened.
