{"id":9040,"date":"2016-02-23T20:36:58","date_gmt":"2016-02-23T20:36:58","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=9040"},"modified":"2019-01-13T16:49:37","modified_gmt":"2019-01-13T23:49:37","slug":"stuffed-sweet-potato","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/stuffed-sweet-potato\/","title":{"rendered":"Stuffed Sweet Potato"},"content":{"rendered":"<p>This is a long process, but a very simple one.\u00a0 This is a good recipe for a young chef.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 sweet potato<\/li>\n<li>2 TBL butter<\/li>\n<li>2 TBL EVOO<\/li>\n<li>Salt and Pepper to taste<\/li>\n<li>2 TBL stock<\/li>\n<li>1 TBL brown sugar<\/li>\n<li>1\/2 tsp ginger<\/li>\n<li>1\/2 tsp cumin<\/li>\n<li>1\/4 tsp chili powder<\/li>\n<li>2 TBL milk<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Wash sweet potato and then poke it full of lots of holes<\/li>\n<li>Wipe outside with oil, salt and pepper<\/li>\n<li>Bake 45 minutes at 350\u00ba<\/li>\n<li>Cut in half (lengthwise) and let cool 10 minutes.<\/li>\n<li>Scoop potato out of the skins<\/li>\n<li>Add butter to the meat, plus ginger and stock<\/li>\n<li>Smash, crush and mix<\/li>\n<li>Add brown sugar, cumin and chili powder<\/li>\n<li>Add milk to get the right consistency<\/li>\n<li>Spoon back into potato skin &#8220;bowls&#8221;<\/li>\n<li>Bake another 20 minutes<\/li>\n<li>Top with chorizo and crema Mexicana<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a long process, but a very simple one.\u00a0 This is a good recipe for a young chef.
