Originally these were filled with cheese and\/or fruit. As the recipe came to the United States we started to fill them with shredded meat, or ground meat with cheese, or something else to create some of the original fast food. The Kolache at this point became more of a wrap or a roll.<\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/02\/kolache.jpg\" rel=\"attachment wp-att-8695\"><img decoding=\"async\" class=\"alignright size-medium aiif8695\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/02\/kolache.jpg\" alt=\"kolache\" width=\"300\" height=\"199\" \/><\/a>This recipe is a dessert, and goes back to the roots.<\/p>\n<p>1\/4 C warmed whole milk<br \/>\n3 TBL melted butter<br \/>\n1 small egg<br \/>\n&#8211; whisk together above ingredients<br \/>\n&#8211; mix together dry ingredients in a separate bowl<br \/>\n1 C AP flour<br \/>\n1 TBL sugar<br \/>\n1 tsp yeast<br \/>\npinch of salt<br \/>\nMix everything in a food processor and mix just until the dough comes together<br \/>\nAdd a bit of flour or milk until you get a well formed dough ball<br \/>\nTurn up the speed and mix for 8 minutes<br \/>\nPlace into lightly oiled GLASS bowl and put in warm place to rise for about an hour<\/p>\n<p>While this rises, make your filling<br \/>\n2 OZ of cream cheese<br \/>\n1 TBL sugar<br \/>\n2 tsp AP flour<br \/>\nzest and juice from one lemon<br \/>\nMix until it all comes together<br \/>\nAdd 2 OZ ricotta cheese<br \/>\nMix again until incorporated<br \/>\nSet aside<\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/02\/Kolaches4.png\" rel=\"attachment wp-att-8771\"><img decoding=\"async\" class=\"alignright size-medium aiif8771\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/02\/Kolaches4.png\" alt=\"Kolaches4\" width=\"300\" height=\"169\" \/><\/a>For a nice finish, make some streusel for the edges<br \/>\n1 TBL AP flour<br \/>\n1 TBL sugar<br \/>\n1 tsp butter<br \/>\nSet aside<\/p>\n<p>After an hour, dump the dough onto a floured surface<br \/>\nFlatten it just a bit, then cut into 4 pieces<br \/>\nCreate four rounds<br \/>\nSpray very lightly with cooking spray to keep them from drying out<br \/>\nSet them on a baking sheet and let them rise for another 90 minutes<br \/>\nFlatten the center of each ball with the greased bottom of a coffee cup or large glass<br \/>\nBrush the top of each kolache with egg white and a TBL of water<br \/>\nPut filling into the center<br \/>\nSprinkle with streusel<br \/>\nBake at 350\u00ba for about 15 minutes<br \/>\nRotate pan, and bake another 10-15 minutes or until browned<br \/>\nServe warm if possible<\/p>\n<p>Kolache photos from <a href=\"http:\/\/www.slovakcooking.com\">www.slovakcooking.com<\/a> and <a href=\"http:\/\/www.brooklynpaper.com\/stories\/35\/7\/24_kolaches_2012_02_17_bk.html\">Brooklyn Paper<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Photo by Elizabeth Graham Egg, chorizo and cheese, and smoked turkey and provolone kolaches baked by Autumn Stanford of Bed-Stuy.[\/caption]A traditional treat from the Czech Republic.
