1\/2 C butter – softened
\n1 egg
\n1\/2 C sugar
\n1-1\/2 C sifted AP flour
\n1 tsp baking soda
\nZest and juice from 3-6 lemons – 1\/4 C<\/p>\n
Cream together butter and sugar
\nAdd egg and beat until fluffy
\nSift together flour and soda
\nAdd alternately to creamed mixture with lemon
\nDrop dough onto ungreased cookie sheet 2″ apart
\nBake at 400\u00c2\u00b0 for 8-10 minutes<\/p>\n
Optional – mix juice from 1 lemon with 1 TBL confectioners sugar
