{"id":855,"date":"2012-01-22T14:51:26","date_gmt":"2012-01-22T14:51:26","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=855"},"modified":"2023-10-10T16:49:02","modified_gmt":"2023-10-10T23:49:02","slug":"parker-house-rolls-from-the-internet","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/parker-house-rolls-from-the-internet\/","title":{"rendered":"Parker House Rolls"},"content":{"rendered":"<p><strong><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/01\/parker.jpg\"><img decoding=\"async\" class=\"alignright size-medium aiif11564\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/01\/parker.jpg\" alt=\"parker\" width=\"300\" height=\"219\"><\/a>INGREDIENTS TO MAKE ABOUT 24 ROLLS<\/strong><\/p>\n<p>HALF RECIPES ARE SHOWN IN PARENTHESIS<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li><strong>STEP ONE &#8211; Mix and proof<\/strong><\/li>\n<\/ul>\n<\/li>\n<li>1\/2 C warm water<\/li>\n<li>1 pkg yeast ( or 1 TBL )<\/li>\n<li>2 TBL honey<br \/>\n(HALF: 1\/4 C, 2 tsp, 1 TBL)<br \/>\n&#8211;<\/p>\n<ul>\n<li><strong>STEP TWO &#8211; Heat to scalding<\/strong><\/li>\n<\/ul>\n<\/li>\n<li>1\/2 C milk<\/li>\n<li>5 TBL butter<\/li>\n<li>2 tsp salt<\/li>\n<li>3 TBL sugar<br \/>\n(HALF:&nbsp; 1\/4 C, 3 TBL, 1 tsp, 2 TBL)<br \/>\n&#8211;<\/p>\n<ul>\n<li><strong>STEP THREE &#8211; Mix in glass bowl<\/strong><\/li>\n<\/ul>\n<\/li>\n<li>3 eggs, beaten<\/li>\n<li>1\/4 milk powder (ideally buttermilk powder)<\/li>\n<li>1\/4 C shortening<\/li>\n<li>OPT: 1\/2 C sourdough starter<br \/>\n(HALF:&nbsp; 2 eggs, 2 TBL powder, 2 TBL shortening,1\/4 C starter)<br \/>\n&#8211;<\/p>\n<ul>\n<li><strong>STEP FOUR &#8211; Create dough-<\/strong><\/li>\n<\/ul>\n<\/li>\n<li>2 C AP flour (or half AP \/ half wheat flour)<\/li>\n<li>More flour if needed to make the dough not too sticky<\/li>\n<li>Reserve 2 C more AP flour<br \/>\n(HALF:&nbsp; 1 C flour, and add more as necessary)<\/li>\n<\/ul>\n<p><strong><span style=\"font-size: 18pt;\">STEP BY STEP<\/span><\/strong><\/p>\n<ol>\n<li style=\"list-style-type: none;\">\n<ol>\n<li>Mix Step One ingredients\n<ul>\n<li>Let rise for about ten minutes<\/li>\n<\/ul>\n<\/li>\n<li>Meanwhile, put Step Two ingredients into sauce pan, and bring to a high simmer\n<ul>\n<li>Set pan aside to cool to just &#8220;warm&#8221;<\/li>\n<\/ul>\n<\/li>\n<li>Mix Step Three ingredients in a glass bowl<\/li>\n<li>Add warm milk mixture<\/li>\n<li>Next mix the yeast mixture into the milk mixture<\/li>\n<li>Put into stand mixer, or use your bowl<\/li>\n<li>Mix, and add flour until it starts to form a dough ball<\/li>\n<li>Then knead on a floured surface<\/li>\n<li>Add more flour to your floured surface&nbsp; if necessary until the dough ball becomes only a little bit sticky<\/li>\n<li>Transfer to a greased bowl and lightly oil the top of the ball<\/li>\n<li>Let rise to twice the bulk&nbsp; &#8211; about 30 minutes\n<ul>\n<li>IDEALLY:&nbsp; Move to the fridge and let rise at least 8 hours.&nbsp; Even overnight is OK<\/li>\n<\/ul>\n<\/li>\n<li>Flatten with your fingers on a floured surface.&nbsp; Kind of flat, but still about 3\/4 inch thick.<\/li>\n<li>Cut into disks<\/li>\n<li>Place on baking sheet or pie pan with sides not quite touching<\/li>\n<li>Brush the top with butter<\/li>\n<li>Cover and let rise again for 1\/2 to 1 hour in warm place.<\/li>\n<li>Bake 12-15 minutes in 400 degree oven.<br \/>\n. . . Another source says 350\u00b0 for 30 minutes<br \/>\n. . .
