{"id":853,"date":"2012-01-22T14:49:29","date_gmt":"2012-01-22T14:49:29","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=853"},"modified":"2016-07-17T21:45:43","modified_gmt":"2016-07-17T21:45:43","slug":"very-thin-tortillas","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/very-thin-tortillas\/","title":{"rendered":"Very Thin Tortillas &#8211; Mu Shu"},"content":{"rendered":"<h2>Authentic Mu Shu Pancakes<\/h2>\n<p>I don&#8217;t like the thicker tortillas that you find in the grocery store.\u00a0 Here is a fairly simple way to make thin ones.\u00a0 These also work well for Mu Shu pancakes.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 cup sifted flour<\/li>\n<li>1\/2 cup\u00a0 very hot water<\/li>\n<li>Scant salt<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Mix flour and salt, then add extremely hot water<br \/>\nWhat I do is put flour and salt in a food processor, and then drizzle in hot water until it starts to come together.<br \/>\nThe hot water breaks down the gluten so that they roll easier and flatter<\/li>\n<li>After adding the boiled water, drizzle in cold water until dough comes together.<\/li>\n<li>Mix adjusting water until dough is like playdough<\/li>\n<li>Wrap in plastic and let set for 30 minutes<\/li>\n<li>Prepare a medium-hot skillet &#8211; Cast iron is my preference &#8211; NO OIL<\/li>\n<li>Roll a log, and then cut in half, then in half again, then in thirds &#8211; You will have 12 pieces<\/li>\n<li>Roll into balls, and then flatten into thick disks &#8211; hockey pucks<\/li>\n<li>Brush sesame oil onto the top of HALF of them<\/li>\n<li>Stack two disks (oil in between) and roll out until about 7 or 8 inches in diameter<\/li>\n<li>Put a pair into a non-greased skillet on 350-400\u00ba for 30 seconds<\/li>\n<li>When the edges start to become translucent (about 30 seconds) flip the pancakes as a pair<\/li>\n<li>Cook the second side for about 30 more seconds<\/li>\n<li>Flip the two together and cook the first side again for only 10-20 seconds more<\/li>\n<li>Remove the pancakes to cool just a little bit, then separate<\/li>\n<li>See tips below on keeping them from drying out<\/li>\n<\/ol>\n<h2>To keep Mu Shu Pancakes from Drying Out<\/h2>\n<ol>\n<li>Place finished pancakes in shallow covered bowl &#8211; like a glass pie pan<\/li>\n<li>Put microwave-heated wet cloth at the bottom of the bowl<\/li>\n<li>Put a plate on top of the cloth so the pancakes do not become soggy<\/li>\n<li>Cooked side always goes up.<\/li>\n<li>Put a pan lid on top of the bowl to keep the moisture in.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<h2>Mu Shu Pancakes &#8211; Video<\/h2>\n<p>Here is a video that shows how to roll the pancakes together. It is kind of hard to visualize above.\u00a0 They fold the pancakes into quarters.\u00a0 Although that is very common, I don&#8217;t like that because they tend to stick together that way.<\/p>\n<p><iframe width=\"840\" height=\"473\" src=\"https:\/\/www.youtube.com\/embed\/sTyo3l0n578?feature=oembed\" frameborder=\"0\" allow=\"autoplay; encrypted-media\" allowfullscreen><\/iframe><\/p>\n<h2>Mu Shu Crepe Pancakes<\/h2>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>3 TBL melted butter<\/li>\n<li>1 C whole milk<\/li>\n<li>1\/2 C flour<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>2 eggs<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Pulse together flour, salt, eggs and butter<\/li>\n<li>Add milk, and pulse just to mix<\/li>\n<li>Strain using a fairly coarse strainer<\/li>\n<li>Let batter rest for 30 minutes to let the glutens relax<\/li>\n<li>Cook in buttered crepe pan until cooked, but not browned<\/li>\n<li>Stack on plate to store and serve<\/li>\n<\/ol>\n<p>Finish on a floured surface. If you have a scale, 120 &#8211; 130 mg ball of dough is perfect for pancakes.
