{"id":819,"date":"2011-12-07T19:36:18","date_gmt":"2011-12-07T23:36:18","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=819"},"modified":"2019-04-14T14:29:21","modified_gmt":"2019-04-14T21:29:21","slug":"po-boy-sandwich-roll","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/po-boy-sandwich-roll\/","title":{"rendered":"Po&#8217; Boy Sandwich Roll"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2011\/12\/bollito.jpg\"><img decoding=\"async\" class=\"alignright size-medium aiif11522\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2011\/12\/bollito.jpg\"  width=\"300\" height=\"199\" \/><\/a>This creates a nice soft bollito that is great for making a po&#8217; boy.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 TBL dry yeast<\/li>\n<li>1 TBL Nonfat Dry Milk<\/li>\n<li>1\/2 TBL Sugar<\/li>\n<li>1 tsp Salt<\/li>\n<li>2 C AP flour (I plan to try swapping 1 Cup of cake flour next time)<\/li>\n<li>1 C Hot Water (120-130 F)<\/li>\n<li>1\/2 TBL Butter<\/li>\n<li>1\/2 TBL cold water<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Mix together 1 Cups flour, yeast, dry milk, sugar and salt<\/li>\n<li>Pour in the hot water and butter,\u00a0mix well<\/li>\n<li>Add remaining flour 1\/2 cup at a time. Switch to hook near the end of flour<\/li>\n<li>Add additional flour 1 TBL at a time to get to an elastic ball that is not TOO sticky, but better sticky than too dry.<\/li>\n<li>Knead on medium speed 2 for 10 minutes<\/li>\n<li>Turn dough out onto floured surface and knead with your hands, folding over and over until it is NOT sticky, and dough springs back when you push a finger into it.<\/li>\n<li>Shape into a ball, oil lightly, and place in large glass bowl at least 3x the size of the ball.<\/li>\n<li>Let rise until doubled in size &#8211; about 1 hour<\/li>\n<li>Turn out onto a lightly floured surface. Knead briefly to allow large bubbles to escape.<\/li>\n<li>Place pan of water in the oven<\/li>\n<li>Start oven preheating to 350\u00ba<\/li>\n<li>Divide into 2 pieces, shape into two torpedoes, and cover loosely with saran and let rise for another 60 minutes on top of the stove<br \/>\nThe dough should double easily in 45 min<\/li>\n<li>Brush dough with cold water, slash across the top and bake for 40 Minutes<\/li>\n<li>Rotate half way through for even color &#8211; do not over-bake<\/li>\n<li>Cool on a rack<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This creates a nice soft bollito that is great for making a po&#8217; boy.
