{"id":8158,"date":"2016-01-20T22:19:04","date_gmt":"2016-01-20T22:19:04","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=8158"},"modified":"2022-04-17T23:01:39","modified_gmt":"2022-04-18T06:01:39","slug":"chorizo-verde-and-chorizo-rojo","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/chorizo-verde-and-chorizo-rojo\/","title":{"rendered":"Chorizo &#8211; Make your own"},"content":{"rendered":"<h1>Chorizo Verde and Chorizo Rojo<\/h1>\n<h2>The meat<\/h2>\n<p>Use 1 part of the fatty jowels of a pig, and about 4 parts of 80\/20 blade meat.<br \/>\nGrind it up using a coarse grind, and then mix by hand with the following spices<br \/>\nThe amounts below are assuming a 1 pound blade meat and 1\/4 pound jowels<\/p>\n<h2>Chorizo Rojo<\/h2>\n<p><strong>Red Pesto<\/strong><\/p>\n<ul>\n<li>1\/4 C Spicy Paprika<\/li>\n<li>2 TBL EVOO<\/li>\n<li>3 TBL Apple Cider Vinegar<\/li>\n<li>1 TBL Brown Sugar<\/li>\n<li>1 TBL Sea salt<\/li>\n<li>1 TBL Ancho Chili Powder<\/li>\n<li>1 tsp Chile Negro Powder<\/li>\n<li>2 tsp Ground Oregano<\/li>\n<li>2 tsp Cumin<\/li>\n<li>1 tsp Cinnamon<\/li>\n<li>1 tsp Granulated Garlic<\/li>\n<li>1\/2 tsp Black Pepper &#8211; ground<\/li>\n<li>Cayenne pepper to taste &#8211; adds heat<\/li>\n<\/ul>\n<h2>Chorizo Verde<\/h2>\n<p><strong>Green Pesto<\/strong><\/p>\n<ul>\n<li>1\/2 C Powdered jalape\u00f1o<\/li>\n<li>2 TBL EVOO<\/li>\n<li>1\/4 C White Wine &#8211; Enough to get the consistency you desire<\/li>\n<li>1-1\/2 TBL Sea salt<\/li>\n<li>2 tsp Ground oregano<\/li>\n<li>1 tsp Sugar<\/li>\n<li>1 tsp Onion powder<\/li>\n<li>1 tsp Green Onion &#8211; minced<\/li>\n<li>1 tsp Bay Laurel (Bay leaves) &#8211; ground<\/li>\n<li>1 tsp Garlic &#8211; ground<\/li>\n<li>1\/2 tsp Black Pepper &#8211; ground<\/li>\n<\/ul>\n<ul>\n<li>&nbsp;<\/li>\n<\/ul>\n<h2>Putting it all together<\/h2>\n<p>After mixing, run the mixture through a sausage casing stuffer.<br \/>\nCreate sausages the size you desire.<br \/>\nHang sausages from any type of rack &#8211; even the oven rack<br \/>\nCook 3-4 hours at 275\u00ba<\/p>\n<p>Alternately, cook in a pan and put into a tortilla will eggs and cheese<\/p>\n<h2>Bobby Flay&#8217;s Take<\/h2>\n<ul>\n<li>I&#8217;ve made some personal modifications, so blame me, not Bobby, if this doesn&#8217;t turn out right.&nbsp; This is what works for me.<\/li>\n<li>Put into hot skillet &#8211; to taste\n<ul>\n<li>Garlic &#8211; two cloves minced and mashed with salt<\/li>\n<li>Diced onion<\/li>\n<li>Cumin<\/li>\n<li>Oregano<\/li>\n<li>Cayenne<\/li>\n<li>Smoked Paprika<\/li>\n<li>Salt and Pepper\n<ul>\n<li>Cook until blossomed &#8211; Add water if necessary<\/li>\n<\/ul>\n<\/li>\n<li>Add a bit of cider vinegar<\/li>\n<li>Add some finely diced onion and tomato<\/li>\n<li>Add diced jalapeno and lime juice<\/li>\n<li>Remove from heat<\/li>\n<li>Add cilantro<\/li>\n<li>Add EVOO and salt and pepper<\/li>\n<\/ul>\n<\/li>\n<li>Add to ground pork<\/li>\n<li>If there&#8217;s not enough fat (for texture) add 1-2 TBL butter<\/li>\n<\/ul>\n<p>Cook and serve with egg in a burrito, or create a patty and serve in a sandwich.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chorizo Verde and Chorizo Rojo The meat Use 1 part of the fatty jowels of a pig, and about 4 parts of 80\/20 blade meat.
