{"id":801,"date":"2011-10-11T10:11:48","date_gmt":"2011-10-11T14:11:48","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=801"},"modified":"2019-04-14T13:54:20","modified_gmt":"2019-04-14T20:54:20","slug":"lasagna-rolls-2","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/lasagna-rolls-2\/","title":{"rendered":"Lasagna Rolls"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>12 whole-wheat lasagna noodles<\/li>\n<li>1 TBL extra-virgin olive oil<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>1 TBL tomato paste<\/li>\n<li>1\/2 LB ground hamburger and 1\/2 LB ground pork<\/li>\n<li>3 C chopped spinach<\/li>\n<li>1\/2 C shredded Parmesan cheese<\/li>\n<li>2 tsp finely chopped Kalamata olives<\/li>\n<li>1\/2 tsp cayenne pepper powder<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>3 C <a href=\"https:\/\/www.grandpacooks.com\/recipes\/scratch-marinara\/\"><strong>Grandpa&#8217;s Marinara Sauce<\/strong><\/a><\/li>\n<li>1\/2 cup shredded mozzarella cheese<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Bring a large pot of salted water to a boil.<\/li>\n<li>Cook lasagna noodles according to package directions.<\/li>\n<li>Drain and return to the pot<\/li>\n<li>Cover with cold water until ready to use.<\/li>\n<li>Brown meat in skillet and set aside.<\/li>\n<li>Heat oil in a large nonstick skillet over medium heat.<\/li>\n<li>Add garlic and cook, stirring, until fragrant, about 20 seconds.<\/li>\n<li>Add tomato paste and cook 60 seconds<\/li>\n<li>Add meat and spinach and cook, stirring often, until the spinach wilts and the mixture is heated through, 3 to 4 minutes.<\/li>\n<li>Transfer to a bowl<\/li>\n<li>Stir in Parmesan, olives, cayenne pepper, salt and 2\/3 cup marinara sauce.<\/li>\n<li>Spread 1 cup of the remaining marinara sauce in the bottom of the pan.<\/li>\n<li>To make lasagna rolls, place a noodle on a work surface and spread 1\/4 cup of the spinach filling along it.<\/li>\n<li>Roll up and place the roll, seam-side down, in the pan.<\/li>\n<li>Repeat with the remaining noodles and filling.<br \/>\nThe spinach rolls will be tightly packed in the pan.<\/li>\n<li>Spoon the remaining marinara sauce over the rolls.<\/li>\n<li>Place the pan over high heat, cover and bring to a simmer.<\/li>\n<li>Reduce heat to medium;
