{"id":798,"date":"2011-10-03T12:40:48","date_gmt":"2011-10-03T16:40:48","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=798"},"modified":"2017-12-02T23:22:37","modified_gmt":"2017-12-03T06:22:37","slug":"fettuccine-alfredo","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/fettuccine-alfredo\/","title":{"rendered":"Fettuccine Alfredo"},"content":{"rendered":"<p>If you want to make it just a bit healthier, check out our <a href=\"https:\/\/www.grandpacooks.com\/recipes\/alfredo-sauce\/\">HEALTHY ALFREDO SAUCE<\/a>.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>10 ounces fettuccini pasta &#8211; boiled 8-10 minutes<\/li>\n<li>1\/2 cup butter<\/li>\n<li>5 cloves garlic, chopped<\/li>\n<li>1 cup heavy cream<\/li>\n<li>1 egg yolk<\/li>\n<li>2 cups freshly grated Parmesan cheese<\/li>\n<li>2 tablespoons dried parsley<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Bring a large pot of lightly salted water to a boil.<\/li>\n<li>Add fettuccine pasta and cook for 8 to 10 minutes or until al dente<\/li>\n<li>Drain.<\/li>\n<li>In a large skillet melt the butter and add the chopped garlic.<\/li>\n<li>Cook on low for about 5 minutes, stirring often, making sure not to burn the garlic.<\/li>\n<li>Pour about a 1\/4 cup of the heavy cream into a small bowl.<\/li>\n<li>Add the egg yolk and beat together; put aside.<\/li>\n<li>Pour the remaining cream into the frying pan.<\/li>\n<li>Increase the heat to medium-high.<\/li>\n<li>As the cream starts to boil, mix rapidly using a whisk.<\/li>\n<li>Slowly add the cream\/egg mixture.<\/li>\n<li>You do not want the egg to curdle.<\/li>\n<li>Continue whisking until well blended.<\/li>\n<li>Add 1 cup of the Parmesan cheese and continue to mix the cream.<\/li>\n<li>Pour in the remaining Parmesan and the parsley, mix until smooth.<\/li>\n<li>Immediately remove from stove.<\/li>\n<li>Serve over cooked pasta.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>If you want to make it just a bit healthier, check out our HEALTHY ALFREDO SAUCE.
