Just remember to whisk almost continually.<\/p>\n<h2>Grandpa&#8217;s Pan Gravy<\/h2>\n<p>&#8211; 2 tablespoons butter<br \/>\n&#8211; 2 tablespoons flour<br \/>\n&#8211; 1 TBL EVOO<br \/>\n&#8211; 1 C beef stock<br \/>\n&#8211; 1 tsp thyme<br \/>\n&#8211; 2 TBL white wine<\/p>\n<p>1. Combine and brown in skillet making a roux<br \/>\n2. In a separate bowl, mix 1 TBL corn starch in with 1 C beef stock<br \/>\n3. Add beef stock to your roux and whisk together<br \/>\n4. Add black pepper<br \/>\n5. As it thickens, add 1 tsp Dijon mustard<br \/>\n6. Strain if necessary<\/p>\n<p>For white gravy, substitute buttermilk for the beef stock<\/p>\n<hr>\n<h2>Grandpa&#8217;s Sausage Gravy<\/h2>\n<p>1. In a separate pan brown pieces of sausage or pork<br \/>\n2. Add chopped bell pepper, celery, and onion to taste<br \/>\n3. Add crushed garlic<br \/>\n4. Add your 1 C beef stock and 1 bay leaf<br \/>\n5. Simmer while you do the next steps<\/p>\n<p>&#8211; 2 tablespoons butter<br \/>\n&#8211; 2 tablespoons flour<br \/>\n&#8211; 1 TBL EVOO<\/p>\n<p>6. Strain if necessary<\/p>\n<hr>\n<h2>Easy Gravy<\/h2>\n<p>Ingredients<br \/>\n3\/4 CU vegetable, safflower, or sunflower oil (not olive)<br \/>\n1 CU flour<\/p>\n<p>Instructions<br \/>\n1. Combine in heavy pan or skillet and whisk together<br \/>\n2. Heat SLOWLY over low heat.<br \/>\n3. Bring to a near boil.<br \/>\n4. Stir constantly with wooden spoon (not metal)<br \/>\n5. Heat until darkened &#8211; approx 20 or more minutes<br \/>\n6. As it thickens, add 1 tsp Dijon mustard<br \/>\n7.
