{"id":7920,"date":"2016-01-10T04:27:07","date_gmt":"2016-01-10T04:27:07","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=7920"},"modified":"2022-07-12T08:51:41","modified_gmt":"2022-07-12T15:51:41","slug":"hummus","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/hummus\/","title":{"rendered":"Hummus &#8211; COLLECTION INDEX"},"content":{"rendered":"<h2>&#8211;<br \/>\nMevlut&#8217;s Hummus<\/h2>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1-2 C dried garbanzos (chickpeas)<\/li>\n<li>1 tsp baking soda<\/li>\n<li>3 cloves garlic<\/li>\n<li>1\/4 C tahini<\/li>\n<li>zest and juice from two limes or one lemon<\/li>\n<li>1\/2 tsp cumin<\/li>\n<li>1\/4 tsp corriander<\/li>\n<li>2 green onions<\/li>\n<li>2 tsp olive oil<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Soak beans overnight in water with baking soda added<\/li>\n<li>Next day, drain and rinse once<\/li>\n<li>Drop into boiling water.&nbsp; Boil 20-30 minutes<\/li>\n<li>Process beans and other ingredients in food processor and put into a serving dish<\/li>\n<li>Create a small &#8220;pool&#8221; of olive oil in the middle<\/li>\n<li>Garnish with green onions, salt and pepper<\/li>\n<li>Sprinkle ground cayenne (to taste)<\/li>\n<li>Serve with torn pieces of pita bread<\/li>\n<\/ol>\n<hr>\n<h2>&#8211;<br \/>\nEdamame Hummus<\/h2>\n<p>From Food Networks<br \/>\nIngredients<\/p>\n<ul>\n<li>1\/2 pound frozen shelled edamame (green soy beans), about 1 1\/2 cups<\/li>\n<li>1\/4 cup tahini<\/li>\n<li>1\/4 cup water<\/li>\n<li>1\/2 teaspoon freshly grated lemon zest<\/li>\n<li>1 lemon (about 3 tablespoons), juiced<\/li>\n<li>1 clove garlic, smashed<\/li>\n<li>3\/4 teaspooon kosher salt<\/li>\n<li>1\/2 teaspoon ground cumin<\/li>\n<li>1\/4 teaspoon ground coriander<\/li>\n<li>3 tablespoons extra-virgin olive oil<\/li>\n<li>1 tablespoon chopped fresh flat-leaf parsley<\/li>\n<li>Suggested serving: Sliced cucumbers, celery, and olives<\/li>\n<\/ul>\n<p>Step by Step<\/p>\n<ol>\n<li>Boil the beans in salted water for 4 to 5 minutes, or microwave, covered, for 2 to 3 minutes.<\/li>\n<li>In a <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/food-processor\/index.html\">food processor<\/a>, puree the edamame, tahini, water, lemon zest and juice, <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/garlic\/index.html\">garlic<\/a>, salt, cumin, and coriander until smooth.<\/li>\n<li>With the motor running, slowly <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/drizzle\/index.html\">drizzle<\/a> in 2 tablespoons of the olive oil and mix until absorbed.<\/li>\n<li>Transfer to a small bowl, stir in the <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/parsley\/index.html\">parsley<\/a> and drizzle with remaining oil.<\/li>\n<li>Serve with the suggested vegetables, or refrigerate, covered, up to 1 day.<\/li>\n<\/ol>\n<hr>\n<h2>&#8211;<br \/>\nBlack Bean Hummus<\/h2>\n<p>2 CU black beans (drained)<br \/>\n\u00bc CU sesame seeds<br \/>\n2 TBL virgin olive oil<br \/>\n2 TBL sesame oil (or tahini)<br \/>\n1 tsp sea salt<br \/>\n1 TBL lemon<br \/>\n2 cloves garlic (minced)<br \/>\n1 \u00bd TBL honey<br \/>\nPaprika for garnish<br \/>\n1 tsp cumin<br \/>\n1 tsp ground red pepper<br \/>\nOnion flakes (to thicken)<br \/>\nDried chives (to thicken)<br \/>\n5 large black olives (chop course)<\/p>\n<p>Step by Step<br \/>\n1. Puree black beans in food processor<br \/>\n2. Add sesame and olive oil, lemon juice and garlic<br \/>\n3. Heat heavy skillet<br \/>\n4. Toast sesame seeds (about 4 minutes)<br \/>\n5. Mix puree with other ingredients (except olives)<br \/>\n6. Spoon into two small bowls<br \/>\n7. Sprinkle paprika over top<br \/>\n8. Serve with a little bit of olive oil poured on top<br \/>\n9. Serve with bread, crackers &#8211; whatever<\/p>\n<p>The key is to puree the beans to a fairly smooth consistency.<\/p>\n<p>1.
