It just adds an extra dimension to your recipe.\u00a0 It&#8217;s GREAT in any kind of marinara.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>Grandpa&#8217;s Thunder Powder &#8211; to taste<br \/>\n<strong>MIRPOIX\/TRINITY and FLAVOR VEGGIES<\/strong><\/li>\n<li>1 onion (chopped fine)<\/li>\n<li>1 large Carrot<\/li>\n<li>1 stalk Celery<\/li>\n<li>3-4 garlic cloves (minced)<\/li>\n<li>Optional red and green bell pepper<\/li>\n<li>Cremini mushrooms &#8211; caramelized first &#8211; 15 minutes<\/li>\n<li>Dry shitake &#8211; soak in boiling water, then strain &#8211; reserve liquid &#8211; destem<\/li>\n<li>1\/2 C veggie or chicken stock<\/li>\n<li>1\/2 C shitake strain (or 1\/2 C more stock)<br \/>\n<strong>ACID BASE<\/strong><\/li>\n<li>1\/2 C nice dark red wine<\/li>\n<li>1 TBL tomato paste<\/li>\n<li>2 TBL crushed tomatoes<br \/>\n<strong>SACHET<\/strong><\/li>\n<li>Rosemary, sage, oregano<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Saute onion, carrot, and celery in EVOO<\/li>\n<li>Simmer on low for about 8 minutes<\/li>\n<li>Optional at this point, add red and\/or green bell pepper<\/li>\n<li>Add tomato paste and garlic and cook for another 3 minutes<\/li>\n<li>Add stock, wine and mushroom liquid<\/li>\n<li>Simmer until reduced and liquid begins to disappear<\/li>\n<li>Add San Marzano whole &#8211; mashed<\/li>\n<li>Use as you would Mirpoix or Trinity as part of another recipe<\/li>\n<\/ol>\n<p><strong>EXTRA INFO<\/strong><\/p>\n<ul>\n<li>Sofrito freezes very well<\/li>\n<li>If you freeze it in an ice cube tray, you can break out the <em>cubes<\/em> and use them to flavor your spaghetti sauce bit by bit.<\/li>\n<li>Optional to add above where you add the garlic\n<ul>\n<li>Red bell peppers<\/li>\n<li>Green peppers<\/li>\n<li>Cilantro<\/li>\n<li>Ajicitodulces<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sofrito is a base for anything that uses tomatoes or tomato sauce.
