{"id":7652,"date":"2016-01-06T13:14:32","date_gmt":"2016-01-06T20:14:32","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=7652"},"modified":"2023-12-16T12:11:52","modified_gmt":"2023-12-16T19:11:52","slug":"buttermilk-biscuits","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/buttermilk-biscuits\/","title":{"rendered":"Grandpa&#8217;s Layered Buttermilk Biscuits"},"content":{"rendered":"<figure id=\"attachment_17235\" aria-describedby=\"caption-attachment-17235\" style=\"width: 251px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/01\/layerd_biscuits.jpg\"><img decoding=\"async\" class=\" aiif17235\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/01\/layerd_biscuits.jpg\" alt=\"\" width=\"251\" height=\"167\"><\/a><figcaption id=\"caption-attachment-17235\" class=\"wp-caption-text\">Note the layers that you get by folding.<\/figcaption><\/figure>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>3 C Flour (Spelt or other high-protein)<\/li>\n<li>1 TBL sugar<\/li>\n<li>2 TBL dried milk<\/li>\n<li>1 TBL Baking powder<\/li>\n<li>1\/2 tsp Baking soda<\/li>\n<li>1 tsp Salt<br \/>\n&#8211; Sift together dry ingredients<\/li>\n<li>1 egg<\/li>\n<li>12 TBL COLD butter in tabs<\/li>\n<li>1 1\/2 C COLD buttermilk<\/li>\n<li>2 TBL melted butter for layers<\/li>\n<\/ul>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2015\/12\/IMG_6286.jpg\"><img decoding=\"async\" class=\"alignright size-medium aiif7035\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2015\/12\/IMG_6286.jpg\" alt=\"IMG_6286\" width=\"300\" height=\"225\"><\/a><\/p>\n<p>For Drop Biscuits, you can just mix the ingredients and drop them into rustic piles.<\/p>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Pulse the butter with half the dry ingredients in a food processor.<\/li>\n<li>Add the COLD buttermilk and mix briefly using your hands &#8211; or better yet a bench scraper &#8211; DO NOT OVERMIX or biscuits will be tough.<\/li>\n<li>Roll flat, fold in thirds and repeat a total of FOUR TIMES &#8211; Folding, but not kneading.&nbsp; Brush each layer lightly with butter before folding.<\/li>\n<li>Your final mat should be about 9&#215;12 inches.<\/li>\n<li>Cover and let it rest in the fridge for an hour<\/li>\n<li>Put on floured surface and cut the edges of with a VERY sharp knife.<br \/>\n&#8211; If using a circle cutter DO NOT TWIST the cutter.
