{"id":752,"date":"2011-09-20T15:35:08","date_gmt":"2011-09-20T19:35:08","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=752"},"modified":"2019-05-12T14:47:17","modified_gmt":"2019-05-12T21:47:17","slug":"pico-de-gallo","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/pico-de-gallo\/","title":{"rendered":"Pico de Gallo"},"content":{"rendered":"<p>Pico de Gallo translates as &#8220;Beak of the Rooster.&#8221; It is a sharp tangy staple and a great side to any Mexican recipe.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 medium tomatoes, seeded and finely diced<\/li>\n<li>1 medium red onion, finely diced<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1\/4 cup fresh lime juice<\/li>\n<li>4 serrano or jalape\u00f1o chilies, seeded and finely diced<\/li>\n<li>2 tablespoons minced fresh cilantro<\/li>\n<li>2 tablespoons tomato juice<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/8 teaspoon freshly ground pepper<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<br \/>\n<\/strong><\/p>\n<ol>\n<li>Mix all ingredients in large bowl.<\/li>\n<li>Cover and refrigerate until ready to use, but let marinate at least an hour.<\/li>\n<\/ol>\n<p><strong>VARIATIONS<\/strong><\/p>\n<ul>\n<li>Serrano and jalapeno chilies are available in most supermarkets. Store up to a week in a plastic bag in the refrigerator.<\/li>\n<li>You may also find the dark green shiny poblano. This chili is milder, but must be roasted and peeled before using.<\/li>\n<\/ul>\n<hr \/>\n<p>FROM SCANNED NOTES:<\/p>\n<p>RECIPE<br \/>\nPico de Gallo<br \/>\n4 medium tomatoes, diced<br \/>\n11\/2 cups canned, diced tomatoes<br \/>\n1\/2 cup diced red onion<br \/>\n3 tablespoons chopped scallions<br \/>\n1\/2 cup diced yellow bell pepper<br \/>\n1 tablespoon diced jalapeno pepper<br \/>\n1\/4 cup chopped cilantro<br \/>\n11\/2 tablespoons fresh lime juice<br \/>\n1 teaspoon salt<br \/>\n1\/4 teaspoon black pepper<br \/>\n1\/2 teaspoon dried oregano leaves<br \/>\n1\/4 teaspoon garlic powder<br \/>\nPlace all ingredients in a food processor and mix briefly.<br \/>\n~<br \/>\nMakes 3 cups salsa, each 2-tablespoon serving containing approximately:<br \/>\n1 O calories<br \/>\n2 gm. carbohydrate<br \/>\nTrace fat<br \/>\nO mg. cholesterol<br \/>\nTrace protein<br \/>\n122 mg. sodium<br \/>\nTrace fiber<br \/>\n3\/99<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pico de Gallo translates as &#8220;Beak of the Rooster.&#8221; It is a sharp tangy staple and a great side to any Mexican recipe.
