{"id":7311,"date":"2015-12-31T19:55:21","date_gmt":"2015-12-31T19:55:21","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=7311"},"modified":"2020-05-28T09:13:26","modified_gmt":"2020-05-28T16:13:26","slug":"shepherds-pie-collection","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/shepherds-pie-collection\/","title":{"rendered":"Shepherd&#8217;s Pie"},"content":{"rendered":"<h2>Shepherd&#8217;s Pie<\/h2>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2015\/12\/shep-pie.jpg\" rel=\"attachment wp-att-7820\"><img decoding=\"async\" class=\"alignright size-medium aiif7820\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2015\/12\/shep-pie.jpg\" alt=\"shep-pie\" width=\"300\" height=\"198\"><\/a>1\/2 pound ground lean beef<br \/>\n1\/2 pound ground pork or lamb<br \/>\n1 sweet onion (large dices)<br \/>\n1 carrot (large dices)<br \/>\n1 TBL tomato paste<br \/>\n1 can crushed tomatoes<br \/>\n1 can whole peas<br \/>\n1\/2 C kernel corn<br \/>\n1\/2 cup finely chopped parsley, thyme and\/or rosemary<br \/>\n2 tablespoons Dijon mustard<br \/>\n2 tablespoons all-purpose flour<br \/>\n1 tsp garlic powder or four cloves minced garlic<br \/>\n1 tsp Worcestershire sauce<br \/>\n1 large egg<br \/>\nAbout 1\/2 teaspoon salt<br \/>\nAbout 1\/4 teaspoon pepper<br \/>\nAbout 1\/2 cup fat-skimmed beef broth<br \/>\n1\/2 C white wine<br \/>\n1 C beef broth<br \/>\n2 tablespoons butter<br \/>\n1\/2 cup shredded Swiss or Parmesan cheese (about 2 1\/2 oz.)<\/p>\n<p>3 large potatoes<br \/>\n3 TBL butter<br \/>\n1\/2 cup cream cheese, at room temperature<\/p>\n<ol>\n<li>Cut 3 large potatoes into one inch pieces and start heating in salted boiling water<\/li>\n<li>Brown beef\/pork mixture in hot skillet<\/li>\n<li>Add onion and carrot &#8211; cook until it starts to become translucent<\/li>\n<li>Add flour, parsley, mustard and egg<\/li>\n<li>Add salt, pepper and broth<\/li>\n<li>Add tomato paste<\/li>\n<li>Deglaze pan with white wine<\/li>\n<li>Add 2 TBL butter, canned peas and crushed tomatoes<\/li>\n<li>Add beef broth<\/li>\n<li>When butter has melted, remove from heat and add cheeses<\/li>\n<li>When potatoes have finished mash them with 3 TBL butter and cream cheese &#8211; mix until smooth<\/li>\n<li>Salt and pepper potatoes to taste<\/li>\n<li>Butter a shallow 3 1\/2- to 4-quart casserole.<\/li>\n<li>Spread two-thirds of the potato mixture evenly over bottom and up sides.<\/li>\n<li>Spoon meat mixture into the center.<\/li>\n<li>Spoon remaining potato mixture decoratively around edge of meat mixture<\/li>\n<li>ALT: Boil potato medallions and place (overlapping) around the edge<\/li>\n<li>ALT: Boil potato medallions and place them over the top of the meat mixture &#8211; sprinkle with cheese<\/li>\n<li>ALT:&nbsp; Pipe mashed potatoes using a pastry bag with a 1-inch star or round tip and pipe around the edge<\/li>\n<li>Bake pie in a 400F oven until potatoes are browned, 30 to 35 minutes<\/li>\n<\/ol>\n<p>NOTES:<\/p>\n<ul>\n<li>If this were to be made with ground beef only, it would be called a Cottage Pie, rather than a Shepherd&#8217;s Pie<\/li>\n<li>If you do make this the day before serving, don&#8217;t bake it until just before planning to eat it.<\/li>\n<li>It should take 35 to 40 minutes to heat through after it&#8217;s been stored in the refrigerator.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Shepherd&#8217;s Pie 1\/2 pound ground lean beef 1\/2 pound ground pork or lamb 1 sweet onion (large dices) 1 carrot (large dices) 1 TBL tomato paste 1 can crushed tomatoes 1 can whole peas 1\/2 C kernel corn 1\/2 cup finely chopped parsley, thyme and\/or rosemary 2 tablespoons Dijon mustard 2 tablespoons all-purpose flour 1 &hellip;
