{"id":6903,"date":"2015-12-21T18:15:33","date_gmt":"2015-12-21T18:15:33","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=6903"},"modified":"2018-01-23T17:37:52","modified_gmt":"2018-01-24T00:37:52","slug":"gluten-free-lasagna","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/gluten-free-lasagna\/","title":{"rendered":"Gluten Free Lasagna"},"content":{"rendered":"<p>Brown diced onions, minced garlic, celery and red bell pepper &#8211; set aside<br \/>\nPrepare your butternut squash &#8211; slice, bake at 350\u00ba for 20 minutes &#8211; set aside<br \/>\n<strong>You can optionally substitute eggplant or zucchini for the butternut squash.<\/strong><\/p>\n<p>Brown 1 lb ground pork shoulder and 1\/2 lb ground 80\/20 hamburger<br \/>\nWhen browned, add in 1 sm can tomato paste, 1 C white wine and 1 can crushed tomatoes<br \/>\nAdd cinnamon stick and bay leaves ( to be removed later )<br \/>\nAdd onions and garlic mixture back in<br \/>\nLet simmer and add water as necessary and reduce for about 90 minutes<br \/>\nYour final result should be like spaghetti sauce &#8211; not too thick, not too thin<\/p>\n<p>In a glass baking dish layer<br \/>\n1\/4 C sauce<br \/>\nThinly sliced butternut squash ( use a mandolin )<br \/>\nRicotta cheese and parsley<br \/>\n1\/4 C sauce<br \/>\nFrozen ( defrosted of course ) spinach<br \/>\nSauteed ( or canned ) mushrooms<br \/>\n1\/4 C sauce<br \/>\nProvolone cheese<br \/>\n&#8211; REPEAT ABOVE LAYERS<\/p>\n<p>Top with sauce and then provolone cheese and shredded Parmesan<\/p>\n<p>Cover with foil and bake 357\u00ba for 45 minutes<br \/>\nRemove foil, then bake another 10 minutes<br \/>\nCool for an hour.
