mix gently<\/li>\n<\/ul>\n<h2>Alternate Recipes<\/h2>\n<p><strong>Regular Donuts<\/strong><\/p>\n<ul>\n<li>1.5 C whole milk &#8211; about 150\u00ba<\/li>\n<li>2.5 oz veg shortening<\/li>\n<li>5 tsp Instant Yeast (or just under 2 TBL) in 1\/3 C warm water<\/li>\n<li>2 whole eggs<\/li>\n<li>1\/4 C sugar<\/li>\n<li>1 tsp freshly ground nutmeg<\/li>\n<li>1.5 tsp salt<\/li>\n<li>1 gallon hot vegetable, safflower, or peanut oil for frying<\/li>\n<li>23 oz AP flour (by weight)<\/li>\n<\/ul>\n<p><strong>Sour Dough Donuts<\/strong><\/p>\n<ul>\n<li>Reduce the dough by 3\/4 C<\/li>\n<li>Reduce the milk by 1\/4 C<\/li>\n<li>Add 1 C sour dough starter<\/li>\n<li>Add 1\/4 C dried milk\n<ul>\n<li>Add all of this mixture as part of Step 1<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ol>\n<li>Combine yeast mixture, shortening, eggs, salt, nutmeg, sugar and half of the flour in your food processor &#8211; Paddle stir to mix<\/li>\n<li>Add 1\/4 more of the flour, stir<\/li>\n<li>Put on dough hook, then add the remainder of the flour<\/li>\n<li>Knead for bout 5-8 minutes<\/li>\n<li>Cover and let rise for 1 hour in cold oven with 4 C container of boiling hot water placed in the oven next to the dough<\/li>\n<li>Tap the dough down and fold the dough into thirds &#8211; twice<\/li>\n<li>Roll to about 3\/8 inch thickness &#8211; Use two baking trays or sticks for a spacer to get even thickness<\/li>\n<li>Sprinkle your baking sheet with flour<\/li>\n<li>Cut big circles and place them on your baking sheet<\/li>\n<li>Cut a smaller hole in the center<\/li>\n<li>Let the holes rise on their own tray for donut holes<\/li>\n<li>Use all of the leftover dough to make more<br \/>\nRoll back into a ball and let rise for 30-60 minutes<br \/>\nRoll flat and cut into squares or more donuts<\/li>\n<li>Let the donuts (and holes) rise for 30 minutes<\/li>\n<li>Heat your oil up to 365-370\u00ba in a Dutch oven<\/li>\n<li>Put four in at a time<\/li>\n<li>Flip after 60 seconds per side<\/li>\n<li>Let drain on cooling rack placed over newspaper<\/li>\n<li>Optional:&nbsp; Put into paper bag with confectioner sugar and shake<\/li>\n<li>Optional:&nbsp; Glaze with Sugar Glaze as follows:\n<ol>\n<li>Combine 1\/4 milk and 1 tsp vanilla in a double boiler<\/li>\n<li>Heat to 150\u00ba<\/li>\n<li>Put 2 C confectioner sugar in a whisk together<\/li>\n<li>Dip donuts into the mixture then put on rack again<\/li>\n<li>Rest at least 5 minutes<\/li>\n<\/ol>\n<\/li>\n<li>Optional:&nbsp; Create a Chocolate Glaze as follows:\n<ol>\n<li>\n<ol>\n<li>Combine 1\/4 milk and 2 tsp vanilla in a double boiler<\/li>\n<li>Heat to 150\u00ba<\/li>\n<li>Put 2 C confectioner sugar in a whisk together<\/li>\n<li>Add 1\/2 C butter (one stick) and 1 TBL corn syrup<\/li>\n<li>Add 4 oz bittersweet chocolate or Cocoa Mix<\/li>\n<li>Don&#8217;t overheat<\/li>\n<li>Dip donuts into the mixture then put on rack again<\/li>\n<li>Rest at least 5 minutes<\/li>\n<\/ol>\n<\/li>\n<\/ol>\n<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1\/2 tsp nutmeg and cinnamon 1 tsp baking powder 1\/2 C milk salt 1\/2 C sugar 2 small eggs 1\/2 TBL shortening 2 C flour &#8211;
