{"id":6352,"date":"2015-11-10T20:23:35","date_gmt":"2015-11-11T03:23:35","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=6352"},"modified":"2020-04-16T12:20:39","modified_gmt":"2020-04-16T19:20:39","slug":"delta-hot-tamales","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/delta-hot-tamales\/","title":{"rendered":"Delta Hot Tamales"},"content":{"rendered":"<p>Delta Hot Tamales<br \/>\nWrap in cloth and\u00c2\u00a0foil to stay warm for hours.<br \/>\nSoak corn husks in boiling water for 30 minutes<br \/>\nMix dry spices:<br \/>\n1 TBL chili powder<br \/>\n1 TBL paprika<br \/>\n1 TBL salt<br \/>\n1 TBL ground cumin<br \/>\n1 TBL sugar<br \/>\n1 tsp black pepper<br \/>\n1 TBL cayenne pepper<br \/>\nMix corn paste ingredients:<br \/>\n2.5 C masa harina or cornmeal<br \/>\n1 TBL baking powder<br \/>\n2 TBL spice mixture<br \/>\nPulse into cornmeal mixture till like dough<br \/>\n12 TBL cold unsalted butter<br \/>\nAdd 1.25 C cold water<br \/>\nRemove 1\/2 C and set aside<br \/>\nUse 1.5 TBL scoop and plate 20-24 portions onto a plate. Let rest 20-40 minutes.<br \/>\nMix with 1\/2 lb 85% lean ground beef<br \/>\n1\/2 lb ground pork<br \/>\n1\/2 tsp baking soda<br \/>\n2 TBL water<br \/>\nReserved cornmeal<br \/>\n2 cloves minced garlic<br \/>\n2 TBL spice mixture<br \/>\nMix<br \/>\nPortion onto a plate into 20-24 portions<br \/>\nCount total number to be made<br \/>\n. Adjust as necessary<br \/>\nSpread cornmeal onto half side of a corn husk<br \/>\n. Leave a bit of edge along top, and a lot toward the point or bottom<br \/>\nRoll meat into a log<br \/>\nPut on top of masa and roll up<br \/>\nMasa should encase meat<br \/>\nFold up pointy end<br \/>\nMake bundles of six-eight<br \/>\nTie with twine &#8211; surgeon&#8217;s knot<br \/>\nTrim excess twine<br \/>\nPut remainder of spices into stock pot<br \/>\nAdd tamales vertically<br \/>\nAdd water to come about 3\/4 of the way up<br \/>\nBring to start of a boil, then reduce to simmer.<br \/>\nCover and cook for about 30 minutes<br \/>\nAfter finished cooking, carefully remove from liquid and put on plate.<br \/>\nUse the remaining liquid in the pot to create a sauce.<br \/>\nAdd 2 tablespoons cornstarch mixed with 1\/4 C water. Continue cooking<br \/>\non simmer until liquid has thickened.<br \/>\nThis is also a good recipe for enchilada sauce.
