{"id":6255,"date":"2015-10-19T03:37:24","date_gmt":"2015-10-19T03:37:24","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=6255"},"modified":"2017-12-02T22:16:49","modified_gmt":"2017-12-03T05:16:49","slug":"pizza-2","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/pizza-2\/","title":{"rendered":"Pizza"},"content":{"rendered":"<p>Ingredients<br \/>\n1 1\/2 CU White Flour<br \/>\n1\/2 CU Corn Meal or Wheat Flour<br \/>\n3\/4 CU Warm Water<br \/>\n2 TBL olive oil<br \/>\n&#8211; will be adding more for consistency<br \/>\n1 pkg yeast<br \/>\n1 TBL white sugar or 2 TBL honey &#8211; to mix with yeast<br \/>\n2 TBL white sugar &#8211; to mix with dry ingredients<br \/>\nscant salt<\/p>\n<p>Instructions<br \/>\n1. Warm water to &#8216;very warm&#8217; to the touch, but NOT HOT<br \/>\n2. Combine water, sugar and yeast together to let the yeast activate<br \/>\n(approx three minutes)<br \/>\n3. Mix everything in a large bowl except for water and sugar\/yeast mixture<br \/>\n( Mix in oregano if doing this recipe by hand, NOT in a bread maker)<br \/>\n4. Add remaining ingredients and mix together. Add water JUST until crumbs stop being crumbly<br \/>\n5. Knead for approx 25 minutes or until you feel your arms will fall off &#8211; If using a bread maker &#8211; approx 15 minutes<br \/>\nHINT: Press your finger one inch into the dough, it should bounce back most of the way<br \/>\n6. Cover with damp tea towel and let rise &#8211; approx 90 minutes<br \/>\nOPTIONAL: Add oregano to the dough<br \/>\n7. Punch down and knead another 5 minutes<br \/>\n8. Remove and form into a well-shaped ball and oil outside very lightly<br \/>\n9. Place in well-greased pan to rise<br \/>\n10. Put dark damp cloth over pan and place in the sun (or warm place) for 75 more minutes<br \/>\n11. Remove to floured surface and flatten (with hands) to desired size. Do not roll. Rolling will eliminate many of the bubbles that will make your crush lighter.<br \/>\n12. Bake the dough without toppings for 5 minutes at 350 degrees for a less soggy crust<br \/>\n13. Spread ingredients on pizza crust and bake for 20 minutes @ 350 degrees<\/p>\n<p>Special Steps For sauce, see Dad&#8217;s Red Sauce.<\/p>\n<p>Variations<br \/>\n1. There are many different recipes on the market for making pizza dough.<br \/>\n2. Try substituting cornmeal or mesquite meal in place of Wheat Flour and see which you prefer!<br \/>\n3. Try mixing chives into dough instead of oregano<br \/>\n4. Spread sauce leaving a two-inch border.
