{"id":6235,"date":"2015-10-19T03:28:56","date_gmt":"2015-10-19T03:28:56","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=6235"},"modified":"2020-04-16T12:21:51","modified_gmt":"2020-04-16T19:21:51","slug":"muffin-tin-omelets","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/muffin-tin-omelets\/","title":{"rendered":"Muffin Tin Omelets"},"content":{"rendered":"<p>There are a lot of steps, but if you go step-by-step this is an easy no-fail recipe.<\/p>\n<p>Preheat your oven to 350\u00ba<\/p>\n<p>Spray (or grease) a cupcake pan.<br \/>\n1\/2 onion &#8211; diced<br \/>\nthick slice of ham &#8211; diced (or bacon)<\/p>\n<p>Fry ham\/bacon in a fry pan<br \/>\nWhen nearly done add diced onion<br \/>\nCook about 5 more minutes<\/p>\n<p>Optional DICED or SLICED things to add:<br \/>\nMushrooms, bell pepper, jalape\u00f1o peppers, olives, chives<\/p>\n<p>Mix the cooked vegetables and put on a cutting board<br \/>\nDivide in half, then half again, then again until you have as many piles as you have muffin spaces.<\/p>\n<p>Loosely place the mixture into each space<br \/>\nTop each space loosely with a bit of grated cheese.<\/p>\n<p>In a mixing bowl, crack 1 egg per 2 spaces.  (eg) 16 muffins = 8 eggs<\/p>\n<p>Whisk together with eggs: 1\/2 cup of milk, 1\/2 tsp baking powder, 1 tsp EVOO, and salt\/pepper to taste.<\/p>\n<p>SLOWLY pour the egg mixture into the spaces.  If you run out of egg mixture, just break\/beat an extra egg and use that.<\/p>\n<p>Put into the oven for 20 &#8211; 25 minutes.<\/p>\n<p>After they\u2019re cooked, allow them to cool in the muffin tin for about 5 minutes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>There are a lot of steps, but if you go step-by-step this is an easy no-fail recipe.
