{"id":6057,"date":"2015-10-12T14:35:13","date_gmt":"2015-10-12T14:35:13","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=6057"},"modified":"2023-05-18T20:34:08","modified_gmt":"2023-05-19T03:34:08","slug":"caramel-candies","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/caramel-candies\/","title":{"rendered":"Caramel Candies"},"content":{"rendered":"<h2>Good<\/h2>\n<h5>Fleur de Sel Caramels<br \/>\n(Salted Caramels)<\/h5>\n<ul>\n<li>3\/4 C C sugar<\/li>\n<li>1\/4 C corn syrup<\/li>\n<li>1\/4 C water<\/li>\n<li>3 OZ cream cheese<\/li>\n<li>1 C heavy cream<\/li>\n<\/ul>\n<p>Stir and heat over a very big pan over medium high heat<\/p>\n<ul>\n<li>Heat to 220\u00ba and simmer 6-7 minutes<\/li>\n<li>At about 280\u00ba swirl to dissolve the crystals that may have formed on the sides.<\/li>\n<li>Increase temperature to 250\u00ba without agitation<\/li>\n<li>At 255\u00ba add 1\/2 C heavy cream (prepare for a reaction)<\/li>\n<li>5 TBL butter<\/li>\n<li>1 TBL soy sauce<\/li>\n<\/ul>\n<p>Caramel should be bubbling freely &#8211; somewhere between 220 and 240 degrees<br \/>\nPour in heavy cream &#8211; prepare for a violent bubbling reaction<br \/>\nStir with wooden spoon<br \/>\nAdd in 1\/2 tsp vanilla extract<br \/>\nBring up to exactly 250 degrees.&nbsp; DO NOT let it exceed 255\u00ba<br \/>\nLess than 250 degrees, and it will be runny.
