See my recipe for <a href=\"https:\/\/www.grandpacooks.com\/recipes\/braised-veal-shank\/\">Braised Veal Shank<\/a> at least a day before starting this recipe.\u00a0 Alternately, this is good when served as a side for <a href=\"https:\/\/www.grandpacooks.com\/recipes\/schnitzel\/\">schnitzel<\/a>.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 C AP flour<\/li>\n<li>1\/2 tsp nutmeg<\/li>\n<li>salt and pepper to taste or <\/li>\n<li>2 eggs<\/li>\n<li>a splash of milk<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Grate nutmeg, salt and pepper into flour<\/li>\n<li>Create well in center of flour and put in two eggs and a splash of milk<\/li>\n<li>Mix and incorporate slowly adding more milk if necessary.<br \/>\nFinal batter should be almost like a pancake batter.<\/li>\n<li>Put large-holed colander over a pot of barely boiling water &#8211; slightly more than simmering though<\/li>\n<li>Pour the batter into the colander allowing batter to drop into the boiling water below.<\/li>\n<li>Push through all batter using a spatula as a pusher.<\/li>\n<li>The squiggles will cook through in 2-3 minutes.\u00a0 When they rise to the top they are done.<\/li>\n<li>Strain and plunge them into an ice bath to stop the cooking.<\/li>\n<li>Strain WELL and pour out on a platter or onto a towel<\/li>\n<li>Here they will rest about 5 minutes or more and absorb any water on the surface of the spaetzle.<\/li>\n<\/ol>\n<ul>\n<li>Serve with seasonal veggies.<\/li>\n<li>Bake the harder veggies<\/li>\n<li>Blanch softer veggies<\/li>\n<li>When your meat is about done, fry your spaetzel in HOT EVOO or clarified butter in a stainless steel pan<\/li>\n<li>Sautee mushrooms if you have them.\u00a0 Better over-done than under-done.<\/li>\n<li>Top with grated Parmesan cheese<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This is classically served with veal.
