{"id":5489,"date":"2015-05-06T23:10:07","date_gmt":"2015-05-06T23:10:07","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=5489"},"modified":"2023-04-26T08:47:08","modified_gmt":"2023-04-26T15:47:08","slug":"mexican-casserole","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/mexican-casserole\/","title":{"rendered":"Mexican Casserole"},"content":{"rendered":"<p>This is a very easy casserole recipes you&#8217;ll want to make again.&nbsp;&nbsp; Serve this ground beef casserole recipe as a dinner or even a dip for tortilla chips.<\/p>\n<p>Cooking Time: 30 min<\/p>\n<p>Cooking Vessel Size: 8 x 8 inch baking dish<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>1 C tortilla chips (crushed, but not pulverized)<\/li>\n<li>1\/2 pound ground beef<\/li>\n<li>1 C salsa<\/li>\n<li>1 can chili with beans<\/li>\n<li>1 (8-ounce) tub sour cream<\/li>\n<li>3\/4 C canned diced tomatoes, drained<\/li>\n<li>Black olives to taste<\/li>\n<li>1\/2 C shredded Cheddar cheese<\/li>\n<li>OPT:&nbsp; Taco Seasoning<\/li>\n<\/ul>\n<p>Instructions<\/p>\n<ul>\n<li>Preheat oven to 350 degrees F if not using a microwave<\/li>\n<li>Spread crushed tortilla chips along the bottom of a lightly greased 8 x 8 inch baking dish<\/li>\n<li>Brown the ground beef in a medium skillet or in your microwave, tossing every 30 seconds until browned<\/li>\n<li>Drain grease from beef<\/li>\n<li>Add the salsa and chili with beans<\/li>\n<li>If you have Taco Seasoning available, add 1 TBL<\/li>\n<li>Spread over the tortilla chips<\/li>\n<li>Spread sour cream over the meat mixture<\/li>\n<li>Top with diced tomatoes, black olives, and shredded cheese<\/li>\n<li>Bake uncovered for 30 minutes, or until bubbly OR<br \/>\nMicrowave for 3 minutes<\/li>\n<li>Garnish with fresh chopped cilantro<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a very easy casserole recipes you&#8217;ll want to make again.&nbsp;&nbsp; Serve this ground beef casserole recipe as a dinner or even a dip for tortilla chips.
