{"id":485,"date":"2011-09-03T19:24:49","date_gmt":"2011-09-03T23:24:49","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=485"},"modified":"2017-12-02T23:24:51","modified_gmt":"2017-12-03T06:24:51","slug":"fish-and-chips","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/fish-and-chips\/","title":{"rendered":"Fish and Chips"},"content":{"rendered":"<p>You will need peanut oil for frying<\/p>\n<p><strong>INGREDIENTS: CHIPS<\/strong><\/p>\n<ul>\n<li>2 large russet potatoes<\/li>\n<li>salt<\/li>\n<\/ul>\n<p><strong>INGREDIENTS: FISH<\/strong><\/p>\n<ul>\n<li>4 fillets of white fish ( cod, haddock, halibut, <span class=\"st\">Tilapia<\/span>)<\/li>\n<\/ul>\n<p><strong>INGREDIENTS: BATTER and DREDGING<\/strong><\/p>\n<ul>\n<li>3\/4 tsp Salt<\/li>\n<li>1 tsp paprika<\/li>\n<li>3\/4 C AP flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp corn starch<\/li>\n<\/ul>\n<ul>\n<li>3\/4 C ice water<\/li>\n<li>3 TBL beer<\/li>\n<li>1 egg, plus 1 yolk &#8211; whisk together in Bowl 1<\/li>\n<li>2 egg whites, plus 1 white &#8211; in Bowl 2<\/li>\n<li>Peanut oil for deep frying<\/li>\n<\/ul>\n<p><strong>SIDES<\/strong><\/p>\n<ul>\n<li>Salt<\/li>\n<li>Malt vinegar<\/li>\n<li>Ketchup<\/li>\n<li><a href=\"https:\/\/www.grandpacooks.com\/recipes\/pickled-onions\/\"><u>Pickled onions<\/u><\/a><\/li>\n<li>Cucumber slices &#8211; Slice extremely thin<\/li>\n<li>Lemon wedges<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Preheat oven to 300\u00ba<br \/>\n<strong>FISH<\/strong><\/li>\n<li>Cut fish into 2 &#8211; 3 inch pieces across the fillet<\/li>\n<li>Season fish generously with salt<br \/>\n&#8211; set aside<br \/>\n<strong>CHIPS<\/strong><\/li>\n<li>Slice potatoes lengthwise into quarters<br \/>\nRotate and cut into quarters again, creating square logs<br \/>\nNOTE: Some recipes have you par boil the potatoes in salted water for five minutes<\/li>\n<li>Put on paper towel to dry<br \/>\n&#8211; set aside<br \/>\n<strong>BATTER<\/strong><\/li>\n<li>Make batter in a large mixing bowl<\/li>\n<li>Mix flour and salt<\/li>\n<li>Whisk in egg from Bowl one, water and beer<\/li>\n<li>Whisk until completely smooth<br \/>\n&#8211; set aside for bubbles to subside<br \/>\n<strong>BACK TO THE CHIPS<\/strong><\/li>\n<li>In a large cast iron skillet, place potatoes in a single layer<\/li>\n<li>Cover with COLD oil by an extra inch<\/li>\n<li>Turn heat under skillet to high and let oil come to 250\u00ba<br \/>\n&#8211; Be sure that you have an instant read thermometer<br \/>\n&#8211; A splatter screen will help too, as it will spatter as the heat increases<\/li>\n<li>Continue cooking until oil comes up to 350\u00ba<br \/>\n&#8211; Meanwhile prepare a baking sheet lined with newspaper, with a cooling rack on it.<\/li>\n<li>When heat reaches 350\u00ba turn heat to low, and continue cooking potatoes for another 2 minutes or until potatoes are golden<\/li>\n<li>Turn heat off and immediately remove potatoes to drain on the cooling racks<\/li>\n<li>Place in the oven at 300\u00ba to keep warm<br \/>\n<strong>BACK TO THE BATTER<\/strong><\/li>\n<li>In a large clean mixing bowl, whisk egg whites until foamy, but not stiff<\/li>\n<li>Whisk both mixing bowls together<br \/>\n<strong>PREPARING YOUR FISH<\/strong><\/li>\n<li>Spread flour on a large plate<\/li>\n<li>Dredge fish lightly with flour and put onto a rack for later use<\/li>\n<li>Reheat oil over high heat to 360-365\u00ba<\/li>\n<li>Using fork, dip piece of fish in batter until well coated<\/li>\n<li>Shake off excess batter<\/li>\n<li>Carefully put fish into oil, no more than four pieces at a time<\/li>\n<li>Fry until golden brown &#8211;
