De-stemmed<br \/>\nOne huge handful Swiss chard . De-stemmed<br \/>\nOne huge handful collard greens . De-stemmed<\/p>\n<p>Been very large skillet start to saut\u00e9 with a bit of EVOO<\/p>\n<p>In small pot to create a B\u00e9chamel sauce<br \/>\n2 tablespoons liquid fat:<br \/>\n &#8211; olive oil or butter or bacon drippings<br \/>\n2 tablespoons AP flour<br \/>\nHeat until it starts to turn golden<\/p>\n<p>Note: not too long. The longer you cook a roux, the less thickening power it has.<\/p>\n<p>Add WARMED 2 cup mixture stirring constantly<br \/>\n &#8211; 1\/2 cup cream or half-and-half<br \/>\n &#8211; 1\/2 cup low-fat buttermilk<br \/>\n &#8211; 1 cup one or 2% milk<br \/>\n . . Warm the mixture (before adding to the pan) in a microwave for about 45 seconds. This way, it will not shock your roux so much, and it will come back up to heat more quickly.<\/p>\n<p>Continue to heat greens until wilted<\/p>\n<p>Once wilted, pour into large steel pan to start cooling.<br \/>\nAdd 1\/4 cup shallots and three cloves minced garlic back into hot skillet<\/p>\n<p>1\/4 cup your choice of chopped nuts: chestnuts, walnuts, sunflower seeds, etc.<\/p>\n<p>Little bit of nutmeg, and a sprinkling of red pepper<\/p>\n<p>Add greens back to skillet, drizzle roux over top<br \/>\nContinue to cook and stir until incorporated<br \/>\nPut into serving bowl and sprinkle lightly with paprika for looks.<\/p>\n<p>Robert@RobertAndrews.NET<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Creamed Greens One huge handful Tuscan kale .
