{"id":4703,"date":"2014-09-13T01:58:04","date_gmt":"2014-09-13T01:58:04","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/lemon-meringue-cupcakes\/"},"modified":"2014-09-13T01:58:04","modified_gmt":"2014-09-13T01:58:04","slug":"lemon-meringue-cupcakes","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/lemon-meringue-cupcakes\/","title":{"rendered":"Lemon Meringue Cupcakes"},"content":{"rendered":"<p>Lemon Meringue Cupcakes<\/p>\n<p>3 C all purpose flour<br \/>\nOne half teaspoon salt<br \/>\n1 tablespoon baking powder<\/p>\n<p>Cream together two sticks room temperature butter and 2 cups of granulated sugar<br \/>\nWhen creamed together add four large eggs<br \/>\nAnd 1 teaspoon vanilla<br \/>\nAdd zest from three lemons<br \/>\nAdd juice from two lemons<\/p>\n<p>Add dry ingredients<br \/>\nAlternate with (total) 1 cup buttermilk<\/p>\n<p>Buttermilk alternative: take one cup whole milk and add 1 tablespoon white vinegar<br \/>\nLet stand 30 minutes<\/p>\n<p>Fill cupcake liners<\/p>\n<p>Bake at 325\u00b0 rotating halfway over a period of 25 minutes<\/p>\n<p>Make your own lemon curd<br \/>\nTen egg yolks plus two whole eggs into glass bowl<br \/>\nSeparate yolks<br \/>\nBeat with 1+ cup sugar<br \/>\nAdd 1 cup lemon juice<br \/>\nThis continually<br \/>\nPlace glass bowl on top of simmering water<br \/>\nDo not let egg yolks solidify<br \/>\nWhen it starts to thicken add 2 tablespoons butter<\/p>\n<p>Create Meringue<br \/>\n2\/3 cup water .
