She wanted an oatmeal cookie with her green tea in the morning. She asked&#8230; I baked&#8230; this was the result. She actually preferred the rounded cookies flatted a bit more than I made them, but they are good either way.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/2 C butter (softened)<\/li>\n<li>1 C brown sugar<\/li>\n<li>2 eggs<\/li>\n<li>1 tsp vanilla<\/li>\n<li>1\/4 C milk<\/li>\n<li>2 C uncooked oats (regular)<\/li>\n<li>1\/2 C AP flour<\/li>\n<li>1\/2 C wheat flour<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/2 tsp baking powder<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>2 tsp ground cinnamon<\/li>\n<li>3\/4 C raisins<\/li>\n<li>zest and juice from one lemon<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>Mix and sift dry ingredients<\/li>\n<li>Soak the raisins in lemon juice<\/li>\n<li>In a large bowl, combine all dry ingredients except sugar and oats.<\/li>\n<li>Sift into second bowl, mix in oats, then set aside.<\/li>\n<li>Cream together the butter and the sugar with a fork.<\/li>\n<li>Mix in eggs, vanilla and raisins (add lemon juice too)<\/li>\n<li>Mix in everything and mix just until moistened.<\/li>\n<li>Scoop out using a small ice cream scooper and pack<\/li>\n<li>Eject onto ungreased baking sheet 2 inches apart on baking sheet.<br \/>\nFlatten out if you like flatter cookies.<\/li>\n<li>Bake in a 350\u00b0F oven for 10 to 14 minutes or until light brown, being careful not to over-bake.<\/li>\n<li>Cool 2 minutes on baking sheet<\/li>\n<li>Remove cookies to cooling rack<\/li>\n<\/ol>\n<p><strong>SPECIAL TIPS<\/strong><\/p>\n<ul>\n<li>Don&#8217;t use Minute Oats. Use actually oatmeal, or your cookies will come out mushy.<\/li>\n<li>Most oatmeal cookies call for raisins. I personally don&#8217;t like raisins (in cookies, anyway) so this recipe does not call for them, but if you were to use raisins, use about 1\/2 C.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe was actually perfected for my mother.
