{"id":4583,"date":"2014-07-04T03:28:44","date_gmt":"2014-07-04T03:28:44","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/potato-croquettes\/"},"modified":"2021-01-24T17:15:23","modified_gmt":"2021-01-25T00:15:23","slug":"potato-croquettes","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/potato-croquettes\/","title":{"rendered":"Croquettes &#8211; COLLECTION INDEX"},"content":{"rendered":"<h2>Potato Croquettes<\/h2>\n<ol>\n<li>Peel and boil potatoes<\/li>\n<li>Put thru food mill<\/li>\n<li>Add 3 eggs into bowl<\/li>\n<li>Whip eggs<\/li>\n<li>Season potatoes, oil, salt, pepper, butter<\/li>\n<li>Fill piece of shaved ham .\n<ul>\n<li>Maybe cheese<\/li>\n<\/ul>\n<\/li>\n<li>Roll in flour, egg and panko bread crumbs<\/li>\n<li>Fry until golden brown<\/li>\n<li>Plate with tomato sauce<\/li>\n<\/ol>\n<h2>Tuna Croquettes<\/h2>\n<p>NOTE:&nbsp; Canned Light Tuna or Skipjack Tuna generally contains less traces of mercury than Albacore or White Tuna, which is larger and has lived in the ocean longer.&nbsp; Avoid Yellowfin and Bluefin Tuna have the most chances for mercury contamination.<\/p>\n<p>Ventresca Tuna comes from Spain.&nbsp; It is a bit more pricey, but some feel that it is worth the price.<\/p>\n<p>Pouches generally have a better texture than canned, because they do not have to be cooked as long as the cans require.<\/p>\n<ol>\n<li>Drain and shred one can or one 7 oz package of tuna<\/li>\n<li>Mix with\n<ul>\n<li>2 eggs &#8211; beaten<\/li>\n<li>1\/4 C panko crumbs<\/li>\n<li>1 tsp lemon<\/li>\n<li>2 tsp Dijon<\/li>\n<li>1\/2 tsp kosher salt<\/li>\n<li>2 green onions &#8211; chopped<\/li>\n<li>black pepper<\/li>\n<\/ul>\n<\/li>\n<li>Use spatula to cut together &#8211; do not mash together<\/li>\n<li>Using a 1 oz ice cream scoop\n<ul>\n<li>Put on parchment in a ball<\/li>\n<li>Let rest 15 minutes for breadcrumbs to absorb water<\/li>\n<\/ul>\n<\/li>\n<li>Roll in 1\/2 C panko breadcrumbs<\/li>\n<li>Press slightly into more breadcrumbs only to form<\/li>\n<li>In saute pan put on medium heat<\/li>\n<li>Put 1-2 TBL EVOO in the pan<\/li>\n<li>Using thin spatula, place in the hot pan<\/li>\n<li>Cook 3 minutes &#8211; if it browns too quickly, turn down the heat<\/li>\n<li>Flip, and cook 3 more minutes<\/li>\n<li>Put onto paper towel to cool<\/li>\n<li>Serve with <a href=\"https:\/\/www.grandpacooks.com\/recipes\/tartar-sauce\/\">tartar sauce<\/a><\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Potato Croquettes Peel and boil potatoes Put thru food mill Add 3 eggs into bowl Whip eggs Season potatoes, oil, salt, pepper, butter Fill piece of shaved ham .
