{"id":4556,"date":"2014-06-23T22:47:38","date_gmt":"2014-06-23T22:47:38","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/tonkatsu-curry\/"},"modified":"2016-07-18T00:12:08","modified_gmt":"2016-07-18T00:12:08","slug":"tonkatsu","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/tonkatsu\/","title":{"rendered":"Tonkatsu"},"content":{"rendered":"<p>Tonkatsu is thin medallions of pork loin (pallard) dipped in flour, oil, and Panko &#8211; then deep fried.\u00a0 After they drain, double fry for extra crispy.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>Pork Loin, cut into one inch medallions, then pounded to about 3\/8 inch thick.<\/li>\n<li>Flour<\/li>\n<li>Egg<\/li>\n<li>Panko bread crumbs<\/li>\n<li>Peanut oil or sunflower oil &#8211; 365\u00ba &#8211; 400\u00ba<\/li>\n<li>Onion, carrot, potatoes, cabbage, butter<\/li>\n<li>Lemon<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Pallard pork medallions into 3\/8 inch steaks<\/li>\n<li>Sear (but do not cook) steaks in hot skillet, then set aside<\/li>\n<li>Add salt and pepper to top of steak<\/li>\n<li>Sautee onion and vegetables in the fond left behind in the skillet.\u00a0 Add butter, and saute onion, bite sized carrot pieces, and fingerling potatoes<\/li>\n<li>And juice of one half lemon<\/li>\n<li>Slice cabbage really really thinly, and put in with the onion<\/li>\n<li>When it wilts down a bit, set aside<\/li>\n<li>Put slits every half inch along the edge of steak<\/li>\n<li>Use paper towels to press all moisture from Pork<\/li>\n<li>Dip pork slices in egg, then flour, then egg, then a mixture of salt, pepper, Panko breadcrumbs, and perhaps red pepper flakes.<\/li>\n<li>Press breadcrumbs aggressively into pork<\/li>\n<li>Slide pork into hot oil<\/li>\n<li>Use skimmer to clean up debris that floats to top<\/li>\n<li>Cook until nicely golden brown<\/li>\n<li>Drain the food on paper towel.<\/li>\n<li>Cut pork into strips<\/li>\n<li>Plate over rice with pickled ginger on the side<\/li>\n<li>And a slice of lemon or lime plus the sauteed veggies<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Tonkatsu is thin medallions of pork loin (pallard) dipped in flour, oil, and Panko &#8211; then deep fried.\u00a0 After they drain, double fry for extra crispy.
