Remove fish pun bones, dry<\/p>\n<p>Skin fish with long flexible knife<br \/>\nLay on table (skin side down) and cut along table<\/p>\n<p>Season fillets with lemon and salt<br \/>\nBrown in saut\u00e9 skillet in a bit of oil at 350\u00b0<br \/>\nAbout 2 minutes per side. Belly side down first<br \/>\nLook at the cut side of salmon and you should see brown coming up<br \/>\nWhen it is about one fourth of the way up flip gently to the other side<br \/>\nCook so that a bit of pink still remains at the center<br \/>\nRemove two plate and set aside<\/p>\n<p>Dump cooking liquid . Do not wipe<\/p>\n<p>Add 4 tablespoons butter and 2 tablespoons lemon juice to hot pan<br \/>\n1 cup white wine<br \/>\nDrizzle EVOO<br \/>\nDijon mustard<br \/>\n.
