{"id":4494,"date":"2014-05-28T14:37:59","date_gmt":"2014-05-28T14:37:59","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/horchata-from-scratch\/"},"modified":"2019-12-26T15:22:29","modified_gmt":"2019-12-26T22:22:29","slug":"horchata-from-scratch","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/horchata-from-scratch\/","title":{"rendered":"Horchata From Scratch"},"content":{"rendered":"<p><strong>INGREDIENTS FOR EASY HORCHATA<\/strong>&nbsp; ( to make 2 bottles )<\/p>\n<ul>\n<li>1 C cooked white rice<\/li>\n<li>1 tsp ground cinnamon<\/li>\n<li>1\/4 cup sugar<\/li>\n<li>1 C hot water<\/li>\n<li>1 C hot milk<\/li>\n<li>1\/2 tsp vanilla<\/li>\n<li>just a pinch of salt Ground cinnamon for garnish when serving.<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Mix rice, cinnamon, sugar and 1 cup hot water<\/li>\n<li>Let sit at room temperature for 1 hour<\/li>\n<li>Stir just to mix<\/li>\n<li>Add 1 cup hot milk and stir again just to mix<\/li>\n<li>Let sit for another two hours at room temperature<\/li>\n<li>Strain through a fine sieve into empty bottles<\/li>\n<li>Store in the fridge for up to a week<\/li>\n<li>Shake the bottle before serving<\/li>\n<li>Serve over ice and garnish with a sprinkle of cinnamon<\/li>\n<\/ol>\n<p><strong>INGREDIENTS FOR A MORE COMPLEX and AUTHENTIC HORCHATA<\/strong><\/p>\n<ul>\n<li>1 cup uncooked white long-grain rice<\/li>\n<li>5 cups water<\/li>\n<li>1\/2 cup milk<\/li>\n<li>1\/2 tablespoon vanilla extract<\/li>\n<li>1\/2 tablespoon ground Mexican cinnamon<\/li>\n<li>2\/3 cup white sugar<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Put rice into a bowl and fill with water, pour through strainer<\/li>\n<li>Repeat Step 1 until water in bowl is clear<\/li>\n<li>Add the rice to 3 Cups boiling hot water<\/li>\n<li>Let rest for about an hour<\/li>\n<li>Add 2 Cups cooler water and add to a blender<\/li>\n<li>Blend until the rice just begins to break up, no longer than 1 minute<\/li>\n<li>Let rice and water stand at room temperature for at least 3 hours<\/li>\n<li>.Strain the rice water into a pitcher using double layer of cheesecloth, or a very fine sieve.<\/li>\n<li>Discard the rice.<\/li>\n<li>Add the vanilla, cinnamon, and sugar<\/li>\n<li>Stir until blended<\/li>\n<li>Stir the milk into the rice water.<\/li>\n<li>Chill and stir before serving over ice.<\/li>\n<li>Keeps for no longer than 10 days.<\/li>\n<\/ol>\n<p><strong>OH, ONE MORE THING &#8230;<\/strong><\/p>\n<ul>\n<li>In El Salvador, horchata is primarily made from morro seeds, not rice.<\/li>\n<li>Other flavorings that you can grind up with the rice are peanuts, almonds and cashews.<\/li>\n<li>Other common ingredients include ground cocoa, cinnamon, sesame seeds, nutmeg and vanilla.<\/li>\n<li>If you don&#8217;t have a blender, you can use rice flour instead of rice<\/li>\n<li>Use emptied water bottles for storing your finished horchata.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>INGREDIENTS FOR EASY HORCHATA&nbsp; ( to make 2 bottles ) 1 C cooked white rice 1 tsp ground cinnamon 1\/4 cup sugar 1 C hot water 1 C hot milk 1\/2 tsp vanilla just a pinch of salt Ground cinnamon for garnish when serving.
