Constantinople, as sung in the old song.<\/p>\n<p>Eggplant (or Patli\u00e7an, in Turkish &#8211; said &#8220;Paht luh jahn&#8221;) figures into many meals there. Here is my personal Turkish recipe.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>1 eggplant<br \/>\nCheddar cheese (grated)<br \/>\nMozzarella cheese (grated)<br \/>\nMarinara (red) sauce<br \/>\n2 eggs<br \/>\nBread crumbs<\/p>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<p>Peel eggplant<br \/>\nCut into 1\/4 inch medallions<br \/>\nBeat the egg well<br \/>\nDip medallions into egg, then bread crumbs<br \/>\nFry over hot skillet in just a bit of oil<br \/>\nThese can be stored for up to a week<br \/>\nWhen you are ready to cook, put aluminum foil onto a baking sheet, and place 3 medallions for each person on the foil<br \/>\nSpread a spoonful of marinara sauce onto the medallion<br \/>\nPut grated cheeses over top of the sauce<br \/>\nBake about 10 minutes at 350 or until starts to brown<br \/>\nA GREAT side for this is Cacik (a cold Turkish yogurt\/cucumber dish)<\/p>\n<p><strong>SPECIAL TIPS<\/strong><\/p>\n<p>Female eggplants generally have smaller seeds than male. Look for an eggplant with a smaller dimple on the end.<\/p>\n<p><strong>OTHER COMMENTS<\/strong><\/p>\n<p>When purchasing, an eggplant, it should be firm to the touch, but dimple slightly.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We spent three months in Istanbul, Turkey.
