do not simmer in Step 1<\/li>\n<li>2 C AP flour and 2 eggs<\/li>\n<\/ul>\n<h3><span style=\"font-size: 18pt;\">CHOUX PASTRY<\/span><\/h3>\n<ol>\n<li>Simmer above ingredients in a small pot for 3-5 minutes<\/li>\n<li>Meanwhile, gather together\n<ul>\n<li>2 C AP flour<\/li>\n<li>2 eggs<\/li>\n<\/ul>\n<\/li>\n<li>Add flour and mix well over heat until ball forms\n<ul>\n<li>Move to a mixing bowl \/ stand mixer<\/li>\n<li>Add 1 egg, and mix until incorporated<\/li>\n<li>Add another egg, and mix<\/li>\n<\/ul>\n<\/li>\n<li>Pipe using a 5\/8 closed tip star tip while still warm<br \/>\nCut with scissors at about 4-5 inches and place on baking sheet, or drop straight into 2&#8243; hot oil<br \/>\nOil should be about 365\u00ba &#8211; 375\u00ba<\/li>\n<li>Chill 15 minutes in the refrigerator if on baking sheet<\/li>\n<li>Combine 1\/2 C sugar and 1 tsp cinnamon in a large bowl<br \/>\nSanding sugar or Turbinado sugar if you have it.<br \/>\nGrandpa&#8217;s CinnaSugar is good to keep on hand<\/li>\n<li>Fry in hot oil for about 3-6 minutes<br \/>\nNo more than 5 at a time &#8211; agitate frequently<br \/>\n= or cover lightly with foil and bake at 400\u00ba for 18-22 minutes<br \/>\nTurn off oven and leave in oven for 10 more minutes with oven door cracked<\/li>\n<li>Drain 15 seconds on a paper towel (if fried)<\/li>\n<li>Toss, sprinkle, or roll in your CinnaSugar mixture<\/li>\n<li>Dip in Chocolate Dipping Sauce to eat<\/li>\n<\/ol>\n<h3><strong>Chocolate Dipping Sauce<\/strong><\/h3>\n<ul>\n<li>4-6 oz semi sweet chocolate\n<ul>\n<li>or bitter sweet chocolate with 1 TBL sugar<\/li>\n<\/ul>\n<\/li>\n<li>1\/3 C heavy cream (very warm &#8211; almost hot)<\/li>\n<li>1\/3 C whole milk<\/li>\n<li>1\/4 tsp vanilla\n<ul>\n<li>or 1 vanilla bean &#8211; split and scrape out vanilla<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3><span style=\"font-size: 18pt;\">Alternate:&nbsp; <\/span><span style=\"font-size: 18pt;\">Use<\/span> <a href=\"https:\/\/www.grandpacooks.com\/recipes\/dulce-de-leche\/\"><span style=\"font-size: 18pt;\"><strong>Dulce de Leche<\/strong><\/span><\/a><\/h3>\n<p>&nbsp;<\/p>\n<hr>\n<h2>Easy Pan churros<\/h2>\n<ul>\n<li>Puff pastry<\/li>\n<li>Cut 1 sheet into 8 strips &#8211; alternately, cut strips on a bias to make diamonds<br \/>\nIf in strips, twist about 3-4 times before putting into hot oil<\/li>\n<li>Cook in hot waffle iron or deep fry in peanut oil in a skillet<\/li>\n<\/ul>\n<p><strong>SWEET<\/strong>:&nbsp;&nbsp;
