No salt<br \/>\nRinsed black eyed peas<br \/>\nCover with water about 2 inches above stuff<br \/>\nBoil, then cover and reduce to a simmer<br \/>\nStir occasionally<br \/>\nCooked when they smash easily<\/p>\n<p>Serve over cooked long grain rice<\/p>\n<p>.<\/p>\n<p>Cabbage<\/p>\n<p>Bacon<br \/>\nFat back<br \/>\nRender<br \/>\nAdd onion, celery, garlic, bay leaf<br \/>\nHalve cabbage . Remove stem<br \/>\nQuarter remainder and put into pot<br \/>\nAdd 3 C water<br \/>\nBring to boil<br \/>\nAdd Andouille sausage pieces to top<br \/>\nCover and simmer<br \/>\nCook until falls apart and is tender<\/p>\n<p>Top with Andouille pieces<br \/>\n.<\/p>\n<p>Beef brisket<\/p>\n<p>Season brisket<br \/>\nSear well<br \/>\nChop celery, carrot, onion, pearl onions, turnips, potatoes, garlic, mushrooms<br \/>\nAlt sweet potatoes or fingerlings<br \/>\n1 qt chicken stock<br \/>\n6 hours in oven or 1 hour in pressure cooker<\/p>\n<p>Serve slice with veggies on the side<br \/>\n.<\/p>\n<p>Corn Bread<br \/>\nBacon fat in bottom of cast iron skillet<br \/>\nHeat to 400\u00b0<br \/>\n1 C flour, 2 C corn meal, 2 eggs<br \/>\nSalt, sugar, scant cayenne, baking powder<br \/>\nMilk to thick pancake batter consistency<br \/>\nALT: Buttermilk with baking soda, not powder<br \/>\nPour into hot skillet<br \/>\nIn oven at 425\u00b0 for about 15 minutes<\/p>\n<p>Turn out and slice<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chef John Besh Black eyed peas Bacon Onion Celery Garlic Bay leaf Ham hock .
