{"id":4080,"date":"2014-02-02T15:38:13","date_gmt":"2014-02-02T15:38:13","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/quinoa-salad\/"},"modified":"2019-03-02T15:50:03","modified_gmt":"2019-03-02T22:50:03","slug":"quinoa-salad","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/quinoa-salad\/","title":{"rendered":"Quinoa &#8211; Several Recipes"},"content":{"rendered":"<p>Quinoa is high in protein and unsaturated fats, and low in carbs and gluten.<\/p>\n<p><strong>INGREDIENTS for Base Recipe<br \/>\n<\/strong><\/p>\n<ul>\n<li>1 C quinoa<\/li>\n<li>2 C skim milk, water, or chicken broth<\/li>\n<\/ul>\n<p><strong>STEP BY STEP for Base Recipe<\/strong><\/p>\n<ol>\n<li>Soak quinoa in water 2-3 minutes, agitating a bit<\/li>\n<li>Rinse to wash of natural coating (saponin) which is toxic<\/li>\n<li>Bring liquid up to a near boil, then stir in quinoa.<\/li>\n<li>Simmer for ten minutes, then start to drain 5+ minute<\/li>\n<\/ol>\n<h2>Quinoa as a Salad<\/h2>\n<ol>\n<li>Prepare base recipe using chicken broth<\/li>\n<li>In food processor add one chili, coriander, spinach, mint leaves, and green onions<\/li>\n<li>Cut chicken in half creating two thin slices<\/li>\n<li>Use pan or hammer to pound even thinner.<\/li>\n<li>Sprinkle chicken with paprika, salt, pepper and allspice<\/li>\n<li>Sear briefly over medium-high heat<\/li>\n<li>Remove from pan and set aside.<\/li>\n<li>Toss in different types of chopped bell peppers<\/li>\n<li>Chop mango into 1 inch pieces<\/li>\n<li>Plate your quinoa<\/li>\n<li>Sprinkled with your food processor greens<\/li>\n<li>Cover with pieces of mango, avocado, and feta<br \/>\n\u2026 Or see our recipe on how to make your own cheese<\/li>\n<li>Sprinkle with coriander and watercress and yogurt<\/li>\n<li>Top with sliced chicken<\/li>\n<\/ol>\n<h2>Quinoa for Breakfast<\/h2>\n<ol>\n<li>Prepare Base Recipe using milk &#8211; DO NOT DRAIN<\/li>\n<li>Add 1-2 TBL brown sugar<\/li>\n<li>1 tsp Grandpa&#8217;s CinnaSugar\u00ae<\/li>\n<li>Add dried fruit or raisins<\/li>\n<li>Simmer for 10 more minute<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Quinoa is high in protein and unsaturated fats, and low in carbs and gluten.
