Too late!\" width=\"350\" height=\"250\" class=\"size-thumbnail aiif4012\" \/><\/a><figcaption id=\"caption-attachment-4012\" class=\"wp-caption-text\">Too tasty&#8230; Too late!<\/figcaption><\/figure>\n<hr>\n<p>1\/3 cup butter<br \/>\n1\/2 cup brown sugar<br \/>\nOne egg<br \/>\nOne half teaspoon salt<br \/>\n1\/2 teaspoon cinnamon<br \/>\n1\/4 teaspoon nutmeg<br \/>\n3\/4 cups cooked or canned pumpkin<br \/>\n1 cup milk<br \/>\n1 cup flour<br \/>\n3\/4 cup raisins<br \/>\n3 teaspoons baking powder<\/p>\n<p>1\/4 cup port wine or Pepsi<\/p>\n<p>Toss to coat raisins with port wine<br \/>\nNuke raisins in microwave for about 30 seconds<br \/>\nLet&#8217;s sit while you prepare other ingredients<\/p>\n<p>preheat oven to 400\u00b0<br \/>\nCream butter brown sugar and eggs together<br \/>\nStir in pumpkin<br \/>\nStir together dry ingredients<br \/>\nAdd milk to sugar mixture<br \/>\nDiscard excess port and mix raisins in with dry mixture<br \/>\nOptional: add 1\/2 cup chopped nuts to dry ingredients<br \/>\nMix dry ingredients into pumpkin mixture<br \/>\n\u2013 Be sure not to over mix. Mix only to moisten<br \/>\nTurn into greased muffin tin<br \/>\n\u2013 We prefer to use muffin pan liner cups<br \/>\nYou might want to try putting batter into a large bag and snipping the corner<br \/>\n\u2013 Use this as a piping bag to squirt into each receptacle<br \/>\n\u2013 Wipe up any spills that might be on the pan. It will make cleanup much easier.<\/p>\n<p>Bake 20 to 30 minutes<br \/>\nLet cool at least five minutes or they will fall apart<\/p>\n<p>If you have a cast iron pan, you can bake in here for a crisper crust. If it is a cast iron loaf pan or skillet, increase baking time.
