{"id":3964,"date":"2013-12-21T17:14:50","date_gmt":"2013-12-21T17:14:50","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=3964"},"modified":"2021-07-04T18:01:10","modified_gmt":"2021-07-05T01:01:10","slug":"foccacia","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/foccacia\/","title":{"rendered":"Basic Foccacia"},"content":{"rendered":"<ul>\n<li>Start with 3 C AP flour<\/li>\n<li>1 TBL instant yeast<\/li>\n<li>1 TBL sugar<\/li>\n<li>2 pinches kosher salt<\/li>\n<li>Add 1 1\/4 C water &#8211; about 110\u00ba<\/li>\n<li>3 TBL EVOO<\/li>\n<li>Stand mixer<\/li>\n<li>Knead 5-10 minutes &#8211; till smooth\n<ul>\n<li><span style=\"font-size: 10pt;\">OPTIONAL:&nbsp; Add 1\/2 cup chopped black olives and 1\/2 cup chopped green olives at the 5 minute mark.<\/span><\/li>\n<\/ul>\n<\/li>\n<li>Heavily oil flat baking sheet (1-2 C)<\/li>\n<li>Put&nbsp; dough onto baking sheet, coat with oil, then flip, then press flat with finger tips &#8211; should fill most of the pan, but not all of it<\/li>\n<li>Cover with plastic wrap, and let rise about 75 minutes<\/li>\n<li>Carefully remove plastic wrap and set aside<\/li>\n<li>Work dough out to edges of pan.<\/li>\n<li>Cover with same plastic wrap and let set another hour<\/li>\n<li>Preheat bottom oven rack to 500\u00b0<\/li>\n<li>Top with desired toppings &#8211; see recipes below<\/li>\n<\/ul>\n<p><strong><span style=\"font-size: 18pt;\">Recipe 1<\/span><\/strong><\/p>\n<ul>\n<li>28 ounce can of diced tomatoes \u2013 drained<\/li>\n<li>1 TBL EVOO<\/li>\n<li>1 clove crushed garlic<\/li>\n<li>1 tsp oregano<\/li>\n<li>1\/4 tsp salt\n<ul>\n<li>In separate bowl mix 1 cup shredded mozzarella, 1\/4 cup grated Parmesan<\/li>\n<\/ul>\n<\/li>\n<li>Spread cheese on first, and then crushed tomatoes.
